Three Cheese Sour Cream Sauced Ground Chicken Stuffed Cubanelle

8-10 Cubanelle Pepper, fire roasted, split in half and cooled


Sour cream sauce

1 T each of butter and flour


Heat in small sauce pan for 1 minute, continually stirring. 

Set aside to cool 5 minutes.


1-1/2 c chicken stock

Pinch of salt

Pinch of pepper

1/2 t toasted cumin

1/2 t sugar


Whisk these together and then whisk into butter/flour mixture.

Cool 5 minutes.


1 c full fat sour cream

1/8 c each of Herdez salsa verde and Herdez guacamole salsa 

Whisk into cooled chicken stock mixture.

Set aside.


Ground Chicken mixture list


1 lb ground Chicken 

1/2 of a medium Fire roasted onion

1/4 c fresh Tinga Sauce 

1/8 c sour cream sauce

Pinch each of salt and pepper


Brown chicken to almost done, add onions, cook till tender.

Add rest of ingredients from ground chicken list.

Add cheeses for chicken mixture.


Cheeses for chicken stuffing

1/4 c Quesadilla cheese

1/4 c Mozzarella 

1/4 c Queso Fresco


Cheeses for topping

1/8 c each Quesadilla cheese, mozzarella and queso Fresco 


13x9 pan for 30 minutes in preheated 375 degree oven


Ladle a small amount sour cream sauce into pan.

Lay halved peppers on sauce.

Spoon 1-1/2 T of chicken cheese mixture on each on.

Ladle more sour cream sauce onto each pepper.

Top with the cheeses.

Bake.


Top with:

Avocado Creama and Tinga sauce


1 avocado, mashed with fork 

1 T mayo

1 T sour cream

1/2 t toasted cumin powder

Pinch of sugar 

Squeeze of 1/2 of a lime

Leftover Mustard Brown Sugar Turkey and Cabbage Pan Fried Dumplings

1/2 c leftover turkey, White and Dark

Set aside


16 Round dumpling or won ton wrappers


1 c chopped Cabbage 

1/4 c chopped Onion

1/4 c sliced mushrooms 

1 t roasted garlic

Pinch pepper flakes 

1 t toasted sesame oil


Stir fry veggies in oil.

Add seasoning sauce to Cabbage mixture.

Cool


Seasoning sauce 

1 t Mirin

1 t Ponzu sauce

1 t brown sugar

1/4 salt and pepper


Place veggie mix in mini food processor pulse. 

Add turkey to make a paste.

Place a teaspoon amount in middle of wrapper and seal edges with water.


For dipping, serve with Sweet Chili Thai sauce.

Salad 

1/2 of the box of Rotini pasta cooked al dente, rinse, drain and set aside

1 English Cucumber, chopped

10 Cherry Tomatoes, sliced in half

1 small Carrots, slice paper thin

1 small Red Onion, sliced paper thin

10 Castelvetrano Olives, sliced in half 

1/2 c Unexpected Cheddar, crumbled, from Trader Joe's 



Dressing

1/4 c Olive Garden Italian dressing

1 t white wine vinegar 

1/2 of a lemon juiced

1 T Greek seasoning 

1 t sugar

1 t Greek yogurt 

Salt and black pepper to taste

Whisk together and set aside.

Prepare and set aside.


Pour dressing over pasta and veggies.

Add crumbled cheese.

Before serving, drizzle additional Olive Garden and toss.

2 c Thin cuts of leftover Filet 

1 Onion, sliced

2 c Broccoli florets

2 c sliced Cabbage

2 t roasted Garlic

1 T pickled chopped Ginger 

1/2 t olive oil

1/2 t sesame oil

Pinch of salt and pepper


Stir fry veggies first.

When veggies are tender add beef.

Lastly add sauce, cook until sauce thickens.

Sprinkle with toasted sesame seeds.

Serve over sticky rice.


Sauce

1/8 c ponzu

1/8 c Chinese BBQ sauce (Costco)

1 t chili garlic sauce

1 c water

2 T cornstarch 

Whisk together and set aside.

Brown Sugar Mustard Smoked Turkey

1 smoked turkey ( already thawed, mine came from Sam's)


Turkey size baking bag

1 t flour

1/2 c Yellow mustard

1 c Brown Sugar

Mini coke



Preheat oven 375 degrees.

Set timer for 1 hour 30 minutes or until temp reaches 145 degrees in multiple spots.

Place flour in bottom of bag.

Smear mustard over top of whole turkey.

Pat brown Sugar over mustard.

Place turkey in floured bag.

Add coke mini. 

Tie bag, cut 2 slits in top.

Place in heavy bottom pan.

Place on bottom rack.

Cook to internal temp of 145 degrees.

Check with thermometer in several places.

Salted Butter Caramel Cinnamon Rolls

    [15] where then is my hope?

        Who will see my hope?



Preheat toasted oven to 375 degrees.

After preheat, set cook time for 45 minutes.


 

1 can of store brand cinnamon rolls, reserve frosting that comes from cinnamon rolls.


Separate into a 9x9 pan, leaving space between each one.


1/2-3/4 c Heavy cream 

Lightly pour around edges and in between each roll.


Mix the following,

1/2 c Brown sugar

1/2 c Melted Butter

Pinch of Kosher salt

Slowly pour over rolls.


Seal in foil.

Place in preheated oven.

After cook time, cool 5 minutes, then frost.

Spoon all that salted butter caramel goodness over each roll and serve.

A cup of coffee was delicious with these!!

Ground Soffritto White Wine Chicken Sliders

1 Lb ground Chicken 

1/4 c plain bread crumbs 

1 t Soffritto seasoning (Trader Joe's)

1/2 of a thinly sliced Leek

Salt and pepper to taste

1/4 t each dried rosemary, thyme and oregano 

Splash of buttermilk

1/4 c 3 Cheese Italian blend


Make into slider Patties.

Drizzle a tiny bit of oil.

Fry 3-4 minutes each side.

To finish, drizzle Sauvignon Blanc over both sides.

Check for a temp of 165 degrees.


To serve toasted brioche roll with Munster cheese, thin sliced tomato and avocado creama.

Quick Hot and Sour Soup


































Ezekiel 16:62-63


[62] I will establish my covenant with you, and you shall know that I am the LORD, [63] that you may remember and be confounded, and never open your mouth again because of your shame, when I atone for you for all that you have done, declares the Lord GOD.”



4 c chicken bone broth

1/4 c ponzu sauce

1 T sushi ginger, diced

2 T honey, plus more to taste

1 t chili garlic sauce

2 T roasted garlic

2 scallions, thinly sliced, white and green parts separated

5 Button mushrooms, sliced  

1/4 c  rice wine vinegar

2 T cornstarch

1-2 c Firm Tofu cut into strips

1/2 t toasted sesame oil

Fresh cilantro



Directions

In a large pot on medium-high heat, add the broth, ponzu, ginger, honey, chili garlic sauce, garlic, button mushroom slices and scallion whites. Stir and taste immediately; if needed, add a bit more honey to balance. Bring to a boil, then reduce the heat to maintain a simmer. Cook for about 15 minutes to allow the ginger and garlic to steep in the soup for flavor.

Add tofu strips.


In a small bowl, whisk the vinegar and cornstarch until smooth. Raise the heat of the soup and add the cornstarch-vinegar slurry. Whisk until the soup slightly thickens, within a minute or two.

 

Garnish each with the scallion greens, a few drops of sesame oil and the cilantro, if you like. Add crunchy won tons for serving.

Serve with egg rolls.

Baking Bag Seared Seasoned Pork Chops and Potatoes

An ej original recipe!

 

 

4 bone in 1 inch thick Chops, season with meat tenderizer, smoked paprika, thyme and rosemary, sear in oil

4 medium microwaved Yukon Gold, 3 minutes each side, peel, cool and quarter and season

1 chunked onion, season and microwaved 2 minutes 


Large baking bag

1 T flour

1/4 c Sauvignon Blanc 

1/4 c water

Add to large baking bag.

Place seared Chops in bag, place potatoes and onions around.

Be sure Chops are flat.

Cinch bag, snip 3 slits in top. 

Bake on a sheet pan in a 350 degree preheated oven for 25 minutes. 

Test with thermometer for a temp of 155 for doneness.

Delicious!!
