Dried Cherry Rotisserie Chicken Salad



































2 Timothy 2:11-13


[11] The saying is trustworthy, for: 


    If we have died with him, we will also live with him; 

    [12] if we endure, we will also reign with him;

    if we deny him, he also will deny us; 

    [13] if we are faithless, he remains faithful—


    for he cannot deny himself. 



Lettuce leaves


Dressing 

1 c mayonnaise 

4 t apple cider vinegar 

5 t clover honey 

1 t poppy seeds 

Salt and freshly ground pepper to taste 


Salad 

2 chicken rotisserie breast, chopped

3/4 cup pecan pieces, toasted 

1 c dried cherries, cut in half (I used the ones from Aldi)

3 stalks celery, thinly sliced


In a bowl, combine mayonnaise, vinegar, honey, poppy seeds, salt and pepper. Refrigerate until ready to dress the salad. This can be prepared up to 2 days ahead. 


Dice chicken breast into bite-size chunks and transfer to a large bowl. Stir in pecans, dried cherries , celery and dressing.

Set air Fryer to 170 degrees, spray pan.

Lay a piece of lettuce on the bottom half of croissant, add to air Fryer.

Mound chicken salad on top of lettuce.

Add croissant top.

Lightly spray top with non stick spray.

Cook 3 minutes, check to see if it's toasted. 

I did 2 at a time!

Delicious!!
