One Pan Crispy Oven Roasted Salsa Verde Chicken Thighs

Heat sheet pan starting in cold oven,  turn on to 425 degrees


8 Chicken thighs, poke holes in thighs, salt and pepper both sides, spray with Pam, place on hot pan skin side down

Cook until 160 degrees,15-20 minutes, rotate pan once.

Flip chicken over to skin side.

Place under broiler for 5 minutes until temp is 175 degrees.


Salsa Verde 

3 T Roasted garlic

1 c Parsley 

2 T Capers, rinsed

2 t Anchovy paste

1/4 t each Salt and pepper

2 T fresh Lemon juice

Pulse until parsley is chopped.

Next add:

1/4 c Olive oil

Pinch pepper flakes


Pulse 3-4 times, set aside until ready to dress chicken.
