Caprese Cherry Tomatoes and Mozzarella Cheese
































23 And not only the creation, but we ourselves, who have the firstfruits of the Spirit, groan inwardly as we wait eagerly for adoption as sons, the redemption of our bodies.

Cherry tomatoes
Mozzarella cheese
Balsamic glaze
Salt 
Pepper
Fresh chopped basil
Wooden skewers

Using skewer, start with tomato then cheese and repeat 5 times ending with a tomato.
Drizzle with balsamic glaze and season, refrigerate until serving.


Whiskey Glazed Beef Filet Kabobs

































4 You are severed from Christ, you who would be justified by the law; you have fallen away from grace.

4 beef filet, got mine at Costco 

Glaze
1/4 c soy sauce
1 T hickory liquid smoke
1/4 c Worcestershire sauce
1/8 c sweet chili Thai sauce 
1/8 c whiskey, I use Jack Daniel for my cooking 

Add glaze ingredients to gal zip lock and place marinated steak  pieces in and marinate for 1 hour, flipping occasionally.

While steak marinates, cut onions and mushrooms. 

Using wooden skewers, start with onion chunk, then mushroom and next steak.
Repeat for a total of 3 times.

Using a large pan, place rack on pan.
Broil on rack for 10-15 minutes on each side.
15 minutes was medium well.
Time is according to your steak preference.

Different Twist on Fried Okra
































9 Therefore God has highly exalted him and bestowed on him the name that is above every name,

2 c frozen okra
1/8 c cornstarch 
1 t flour
1 t cornmeal
1/4 t Garlic granules 
Salt and pepper to taste
3 T Olive oil for frying

Fry in 2 batches.
Add all ingredients to semi thawed okra.
Heat oil to medium, add okra, let cook on one side till crispy.
Flip and repeat.

Phanaeng ( Panang) Curry Chicken with Bell Pepper

This is a lovely Thai dish!
Panang is also a correct pronunciation.
It's spicy, sweet and so flavorful.
It can very made with beef, chicken, pork or shrimp. 
I cheated and used a ready made sauce which I jazzed up.

4 large Chicken tenderloins, silver piece removed and cut into small chunks, seasoned with season salt and basil 
Clarified butter for sautéing  
1 c bell pepper, cut into thin strips ( I used green) 
1 t basil
Panang curry sauce (Tantara brand)
1/4 t black strap molasses 
1/4 t toasted sesame oil
1/4 t sumac
1 t Honey
Salt to taste

Sauté chicken and pepper in clarified butter.
This took maybe 5-7 minutes.
Add 1/2 of the bottle of sauce.
Add the rest of ingredients.
Serve over rice.

Unconventional Cinnamon Roll Waffles

I saw this recipe on Delish.com.
The recipe creator was Micah Morton.
Grand kids loved them!
I changed the recipe a little.

Batter
3 large croissants or 9 oz. brioche bread cut into small pieces ( I used a combination of the two) 
1/4 c cornstarch
1 c whole milk
2 large eggs
1 t vanilla 
1 t pure maple extract
1 1/2 t ground cinnamon
3 T butter, melted

2 oz cream cheese, keep cold
2 T light brown sugar

Maple syrup, for serving

ICING
3/4 c powdered sugar
4 T milk

Preheat waffle maker. 
Spray with non stick spray.
Place bread cubes in mixing bowl toss with cornstarch and set aside. 
In another bowl whisk together milk, eggs, vanilla and cinnamon. 
Pour over bread mixture, then add in butter and mix well.
In a small bowl, mix together cream cheese and brown sugar. 
Drop small chunks of the cream cheese/brown sugar mixture into bread mixture and distribute evenly without breaking the chunks apart.
Scoop full half-cups of mixture onto hot waffle iron. 
Spread mixture out with a heatproof spatula and close the waffle iron, pressing down firmly.

Make icing: Use a fork to whisk together powdered sugar and milk, then drizzle icing over the waffles.

Once the waffle rises, check for deep brown color and remove to a plate. 
Serve with icing and syrup.

Grilled Chicken Adobo Club Torta

4 pieces grilled chicken, flatten, season and grill in butter
Clarified butter
Onions slices to grill

I used my stove cast iron griddle to cook chicken and onions. 
Afterwards, I scraped griddle and placed kaiser rolls with the cheese to warm.

Seasoning mix
1/2 of a Fresh lime juiced, squeeze over chicken
2 T Dry Adobo seasoning( I buy this at World Market)
2 T Smoked paprika
1 t Ancho Chili powder

4 Kaiser rolls 

Canadian bacon slices
Shredded Quesadilla cheese
Lettuce
Tomato slices 

Chipotle in Adobo Mayo
1 t chipotle in Adobo 
1 t fresh Lime juice
2 T Mayo
Mix together.

Build sandwich.
To one side of kaiser rolls, add cheese then chicken, grilled onions, ham.
To the other side add chipotle mayo, lettuce and tomato.
This torta was delicious!

Mexican Chicken Suiza

Stuffing
3 c rotisserie chicken breast, pulled
1 small onion, diced
1 T roasted Garlic
1 t Cumin
1 t smoked Paprika
1/2 t Coriander 
1/2 t sumac 
1/2 t salt

3 T Whiskey
2 T olive oil

Bloom herbs in oil for 1 minute.
Add onions and garlic.
Sauté 2 minutes.
Add chicken.
Sauté 2 minutes.
Add whiskey and sauté 1 minute.
Add 1/4 c of the white sauce at the end.
Set off heat.

White Sauce 
8 oz Herdez Salsa verde
1 can of evaporated milk
1 c Queso Fresco Cheese( Aldi)
1/2 t toasted cumin
Smoked Salt
Pinch of sugar
Black pepper

Bring to light boil, cook, stirring for 5 minutes.
Set aside.

8 flour tortillas, small 
1 c Frito Lay bean dip
Spread bean dip on tortillas, add chicken filling.
In a 13x9 pan add enough of the white sauce just to cover.
Roll and turn seam down.
Place filled and rolled tortillas on sauce.
Cover tortillas with rest of sauce, cover top with cheese topping and seal in foil.
Bake preheated 350 degree oven for 45 minutes

Reuben Croissant Bites


































Remember your mercy, O LORD, and your steadfast love, for they have been from of old.  - Psalm 25:6




1 can of crescent rolls
1-1/2 c chopped Pastrami 
1 c dry sour kraut, squeeze with paper towel to remove some of the liquid. 
1/2 c Russian dressing
1 c shredded Gruyere cheese
1 beaten egg white, for top crust

Half the crescent rolls.
Roll out to a large square.
Divide into 2 pieces to make a top and bottom.
Bake in preheated 375 degree oven for 10 minutes or until it is lightly brown.
Prepare filling.
Chop Pastrami, add dried kraut, and salad dressing. 
Fry in skillet until slightly crispy.
Place on toasted bread bottom.
Add cheese, then top.
Brush top with egg white.
Bake 20 minutes or until slightly brown.
Cool and cut into squares with a pizza cutter.
Grand kids raved about these yummy bites!

Brioche Garlic Cheesy Bread
































20 You who have made me see many troubles and calamities will revive me again; from the depths of the earth you will bring me up again.

Sliced Brioche bread
Olive oil
Salt
Pepper
Roasted garlic
Parmesan cheese

Drizzle oil lightly on bread.
Take mashed roasted garlic and spread on bread. 
Salt and pepper.
Add cheese and toast under broiler.
Slice each piece into 3 servings.

BBQ Pork Fried Potatoes and Onions

1 c BBQ pork, chopped
1/4 c BBQ sauce, I make my own, recipe this blog under sauces tab
2 Potatoes, yellow butter potatoes, microwave    covered 3 minutes on each side
Oil for frying, I use light olive oil
1 small Onion
Garlic salt
Seasoned salt
Smoked paprika
1/4 c Smoky Gouda shredded cheese

Add oil to skillet, just cover bottom.
Heat to medium hot.
Slice potatoes into 1/4 inch rounds, then chunks.
Add them to hot oil.
When they begin to crisp up, add onions.
Using paper towels, soak up excess oil.
Turn off heat.
Toss BBQ pork in sauce and add to hot fried potatoes.
Top with cheese.

Foil Veggie Pack

Colored Bell peppers, cut into strips
Onions, sliced 
Yellow Squash, sliced
Asparagus 
Broccoli, cut into florets

1/4 c Olive Garden salad dressing
1/2 t Seasoned salt
1 t Smoked paprika 
1/2 t Aleppo pepper
Clarified butter, drizzle over veggies

Place in foil packs and seal.
Bake 425 degree oven for 30 minutes.
