Pork Diane

1 lb Boneless pork ribs
2 T Clarified butter
1 Leek, chopped
1/2 of a onion, sliced
1 c mushrooms, sliced 
1/2 c chicken stock, made mine from chicken base seasoning
2 T Worcestershire sauce
2 t Dijon mustard
3 T cherry brandy 
Cracked black pepper
1/2 t chopped chives

In a cast iron Dutch Oven, sauté onion, leeks and mushrooms in butter.
Add pork and sear.
Add the rest of the ingredients.
Stir around, cover and bake 1 1/2 hours on 425 degrees.
Serve over rice or mashed potatoes.

Left Over Smoked Turkey Tetrazzini

An ej original!

1 T clarified butter
1/4 c leeks, sliced
1/4 c frozen English peas
1/4 c stick cut carrots
1 T celery, sliced
1 T chicken base seasoning
1 T fresh chopped Sage 

In a large skillet, sauté the above veggies in the clarified butter.
Set aside.

Cook 2 c thin egg noodles according to directions.
Set aside.

Chop 2 c turkey.
Set aside.

1/4 c Sauvignon Blanc
1 c water
1/4 c heavy Cream
1/4 grated Parmesan 
1/4 c garlic herb Boursin cheese
Few turns cracked black pepper
1 t flour

Heat to medium the above liquids and cheese ingredients.
When it's slightly thickened, add veggies and chopped smoked turkey.
Lastly add cooked egg noodles.
Serve with crusty garlic cheese bread.

Cashew Beef and Chicken in Hoisin Garlic Sauce

Fast-easy-delicious!!

2 t olive oil
1 leftover chick fil a piece of chicken, slice thin
1 c filet of cooked beef, sliced thin, I keep it in the freezer
1 c cabbage 
1/2 c onion 
1 t fresh ginger, diced
1/4 c cashews
1/4 c Soy Vay Hoisin Garlic marinade

Heat oil with the ginger, then add onion and cabbage.
When veggies are tender, add meat and marinade.
Heat just through then add cashews. 
Serve over rice or noodles.

Italian Seasoned Shredded Pork and Gravy

6 Boneless country style pork ribs, got mine at Aldi's for $ 4.89

Rub
1 T Smoked paprika 
1 t Thyme
1/2 t Salt 
1/2 t Pepper
1 T Garlic 
Olive oil for searing

In a Dutch oven, sear pork in oil.
Add 1/2 c water.
Cover.
Bake in preheated oven set to 375 degrees for 1 1/2 hours.
Check after1 hour, may have to add another 1/2 c water. 
Return to oven.
Remove meat to a plate.

Gravy
Drippings from pork pot
2 t olive oil
1 onion, sliced thin
1 c beef broth, I make mine from Beef base, Orrington Farms
1 t apple cider vinegar 
1/2 t sugar
1/2 c heavy Cream
1 c milk
1/2 c half and half
Add oil to pot along with drippings.
Add onions and sauté.
Add in liquids, stir and return meat to the pot.
Put back in oven cover for an additional 20 minutes.
Shred pork into gravy and serve over sticky rice or mashed potatoes.



My Take on Alton Brown's Sausage Recipe

1 1/2 lb ground pork or you can grind pork butt cut into strips
6 slices chops bacon, put in freezer to firm up for chopping
1 t kosher salt
1 t freshly ground black pepper
1 t finely chopped fresh sage leaves
1 t finely chopped fresh thyme leaves
1/2 t finely chopped fresh rosemary leaves
1 T light brown sugar
1/4 t nutmeg
1/4 t red flakes 
1/2 t whole fennel seeds

Grind bacon pieces.
Grind pork again.
Add bacon to pork, then add seasonings.
Hand mix just to incorporate.
Make patties, refrigerate or freeze.
Weight down with a skillet, fry covered. 
Delicious!

Bang Bang Style Shrimp

My take on this wonderful recipe, Yum!!
I made some changes according to my taste and it turned out great.


1 lb. large shrimp, cleaned, tails removed
1/4 c buttermilk
Smoked salt and Cracker black pepper, to taste
1/4 t smoked paprika 
Place in a bowl and stir around to cover shrimp, leave in 10 minutes.
Drain on paper plate.

Make sauce and set aside.
Sauce
1/2 c Miracle Whip
1/4 c Sweet Chili Thai Sauce
1/2 t -2 t Sriracha, according to taste

Dredge
1 c cornstarch 
Place cornstarch on paper plate.
Add half the shrimp. 
Flip around with a fork.
Shake off excess.

1 c Peanut oil for frying
Heat oil on medium, add shrimp.
Don't over cook.
Cook 2 minutes on each side.
Pink should show through and they will be very lightly browned.
Drain on plate and spoon sauce on both sides.
Serve on lettuce with a side of angel hair.
For garnish, you can add chopped scallions.

Chipotle in Adobo BBQ Ranch Sauce and Roasted Chicken Sandwich

Sauce
3 T BBQ sauce, I use my own recipe, 2016 BBQ, under the  Sauce tab
2 T Ranch dressing
1 t chipotle in adobo sauce, sauce and peppers
Mix together, set aside.


2 c Roasted Chicken, Juicy Roasted chicken, recipe under the chicken tab
1 Onion, sliced
1/2 t bacon grease
4 slices crisp cooked black pepper Bacon, cook and set aside
1/4 c Cheese, I used shredded Queso quesadilla, from Aldi
4 slices, Honey Wheat Bread, I buy Aldi's
Avocado Mayo, 1 mashed avocado and 1 t Mayo, salt to taste ( make and set aside)


Heat bacon grease, add onion, sauté until tender. 
Add chicken, pulled or sliced breast, sauté just to heat.
Add 3-4 T chipotle BBQ sauce, sauté 1 minute.
Set aside.

On the greased griddle, add the bread, toast on both sides.
Add the cheese, top with chicken, remove to plate, spread avocado Mayo and add bacon.
