Spicy V-8 Beef Tenderloin Chicken Tortilla Soup

2 c Spicy V-8
2 c Water
Splash of olive oil
1-2 slices left over cooked Beef tenderloin cut into chunks
2 c Rotisserie chicken, pulled
1/2 block of cream cheese, cut into small chunks
1 can rinsed Black beans
1 Onion, chopped
4 multi colored Mini bell pepper
1 t roasted mashed Garlic
Pinch of Cocoa (non sweet)
2 T Chicken base seasoning
1 t cumin
1 t smoked paprika
1 t chili powder
1 t sugar
1 t ancho chili powder
4 small flour tortillas, cut into quarters and then slice into strips

To serve top with sour cream
Sprinkle of parsley, fresh or dried
Sprinkle of cilantro, fresh or dried


Add oil to pot and heat.
Add onions, peppers and garlic, sauté until they are slightly tender and add all seasonings, drained beans and meats.
Then add water, v-8 and bring to a soft boil, then add cream cheese and tortillas.
Cook for 30 minutes.
To serve add sour cream, parsley and cilantro.

Cracked Black Pepper Bacon Mustard Brown Sugar Glazed Wieners

2 pgks. Ball Park Finest Hickory Smoked Beef no nitrate wieners, each one cut into thirds
1 pgk. Low sodium Hormel Black Label bacon, cut in half, you can stretch it if it doesn't fit
Cracked black pepper, I love Malabar found at Costco
Yellow mustard
Brown sugar
Wooden Toothpicks

Bake preheated 350 degree oven on bottom rack for 45 minutes on a parchment lined sheet pan.

Wrap each wiener in bacon, secure with a toothpick.
Pepper.
Shake mustard, draw a line down the wiener and press a pinch of brown sugar into the mustard. 
They will burn so watch toward the end of the cooking time.

Baby Potato Hash For Two

12 red and white baby potatoes
1 onion, cut in half and slice
4 tiny peppers, red, yellow and orange, slice in rings
2 slices of left over ham, chopped
1 piece left over beef tenderloin, sliced thin
Seasoned salt
Garlic granules
Fried hard egg


This recipe utilizes Christmas left overs.
It's fast, versatile and delicious!!!
I've made this before using regular potatoes.



Microwave potatoes covered for 3 minutes on each side.
Potatoes might crack, that's fine.
Microwaving ensures crispness.
Cut in half.
Add olive oil to skillet.
Heat oil and add potatoes, cooking 4 minutes, then add meats, onions and peppers.
Fry enough eggs according to how many servings you will have.
I fried two because we were going to eat this 2 days in a row.
To serve place hash on plate and top with fried egg! Yum!!!

Baked Lobster Kale Artichoke Dip






He heals the brokenhearted and binds up their wounds.  - Psalm 147:3







4 oz. room temp cream cheese
1/4 c sour cream
1/4 c mayo
1 T Worcestershire sauce
1/2 of the juice of a lemon 
6 oz. lobster pieces( you can also use crab or shrimp)
6 oz. artichoke hearts
1 c kale
1 red onion
1 c  fontina cheese, divide into 1/2 c 
1/2 c  Mozzarella 
Cracked black pepper



Sauté the onions, lobster, kale and artichoke hearts in oil.
Add the lemon juice, pepper and Worcestershire sauce 
Mix cream cheese, mayo, and sour cream.
Add the mozzarella and 1/2 of the fontina then combine the veggie lobster mixture.
Place in small cast iron skillet and top with remaining fontina.

Cotton Candy Salad

1 can Eagle brand
1 can Cherry pie filling
1 can Strawberry pie filing
1 can of dark sweet cherries, drained well and chopped
12 oz. cool whip
2 small cans crushed pineapple, drained well
1 c toasted pecans


Mix canned items well, add pecans, then fold in cool whip.
Chill.

Peanut Butter White Chocolate Swirl Pretzel Almond Bark

2 c white chocolate melting chips
2 c dark chocolate melting chips
1/4 c peanut butter
2 c pretzel-smoked almond mix, chopped 


Parchment paper, spraying with Pam
Jelly roll pan

Turn oven on just to warm.
Melt the all dark chocolate in microwave safe bowl and set in warm oven.
Melt 1 c of white chips, set in oven.
Melt other cup of white chips and stir in peanut butter until melted into the white chocolate.
Take out the dark chocolate and spread into pan.
Then take 1 1/2 c of the pretzel-nut mixture and pour on top of dark chocolate.
Drizzle the melted white chocolate onto pretzel-almond dark chocolate.
Next drizzle the peanut butter white chocolate, then press the remaining nut mixture into peanut butter white chocolate. 
Take a fork and swirl it.
Refrigerate to set, break into chunks.

Tex Mex Chicken Taco Soup

1 t olive oil
1 quart water
2 each Red and yellow tiny bell peppers, chopped
1 Onion, chopped
1 T roasted, Garlic
1 ear fresh Corn
1/2 packet taco seasoning, I make my own) under the seasoning tab this blog
1 T Chicken base seasoning
1 can Black beans, rinsed and drained
1/2 of Rotisserie chicken, pulled
1 c Salsa
3 T Creme Fraiche


Topping
Cheese
Sour cream
Fritos or tostado chips


Add oil to pot and sauté onions, garlic and peppers. 
Season with chicken base seasoning.
Add water, salsa, chicken, beans, corn, taco seasoning and Creme Fraiche.
Simmer 20 minutes.
To serve add the toppings

Brown Sugar Bacon Franks

1 pgk. Ball Park Beef no nitrate Franks, cut each one into 3 
Brown sugar
Bacon slices, cut in half
Toothpicks, to secure bacon

Bake 350 degrees for 40 minutes on middle rack in a parchment lined pan.

Using poultry scissors, cut bacon and franks.
Wrap each frank with 1/2 piece of bacon, secure with toothpick.
Take a pinch of brown sugar and top each one.
Bake.
Watch toward the 30 minute mark, the sugar will burn. 
If you see liquid around the bottoms of the franks, remove the liquid using a paper towel.

Cherry Jalapeño Kerry Gold Dubliner Irish Cheese Ball






And he said to man, 'Behold, the fear of the Lord, that is wisdom, and to turn away from evil is understanding.'"  - Job 28:28









2 room temp cream cheese
1 T heavy cream
5 T cherry juice
1/2 c powdered sugar
10 pickled jalapeño slices, diced 
10 diced cherries, can dark sweet cherries, reserve juice
1/2 c Dubliner cheese, shredded
Salt, I used smoked Alder Wood salt 
Pepper, a few turns cracked black pepper

2 c Toasted chopped salted pecans
I salt mine with seasoned salt but first I spray with Pam cooking spray.
Chop and set aside.

Take the room temp cream cheese and add the cream, cherry juice, salt, pepper, powdered sugar, diced jalapeño and cherries, and Dubliner cheese. Mix well. Mixture will be loose, have a slight purple color and be sticky. Cool down in fridge for an hour. Take out and roll into balls, then roll in nuts. Seal in plastic wrap. Makes 2 large or 4 medium.

Manchego and Irish Cheese Mascarpone Sausage Balls

1 lb. ground sausage, hot or mild, pinched off in chunks
1 1/4 c Pioneer biscuit mix
1 1/4 c thick shred( half Manchego half Irish Full flavor)
4 T mascarpone 
2 T buttermilk


Throw into food processor and pulse until it sticks together in a clump.
Separate into quarter size balls and place on parchment covered jelly roll pan.
Bake preheated 400 degree oven for 25 minutes.
Serve with honey mustard.

Instant Pot Whiskey Beef with Red Peppers

1 lb. boneless beef stew tossed in flour
1 bell pepper
1/4 t black pepper
2 T Whiskey 
2 T Worcestershire sauce
Meat tenderizer sprinkled on beef
1/2 t Onion powder
1/2 t Garlic granules 
1 Shallot, diced
1/2 c water

Olive oil and clarified butter for searing meat

Set Instant Pot to sauté setting and add oil/clarified butter.
Season meat with tenderizer, onion powder, pepper and garlic.
Toss meat in the flour.
Sauté meat until it is slightly browned.
Add shallot and peppers, cook 1 minute.
Add whiskey, Worcestershire sauce and water.
Change setting to meat, place lid on, set to pressure, adjust time to 45 minutes.
Take off pressure after 45 minutes.
Remove lid.
Make a cornstarch slurry (1/4 c water plus 1 t cornstarch) to make a gravy.
Serve plain or on rice or egg noodles.

Honey Caramel Almond French Toast






15 The idols of the nations are silver and gold, the work of human hands.

White Mountain bread (Publix)
Crushed almonds
Caramel syrup
Honey
Whip Cream

Bread soak
2 beaten eggs
1/8 c Half and half
1 t Cinnamon
1 T Sugar

Soak bread, grill on flat top or skillet that is greased.
Brown slightly and flip.
Drizzle honey and caramel.
Sprinkle with almonds.
Add whip cream and devour!

Honey Garlic Chicken

Perdue Popcorn Chicken (fried frozen chicken found at Costco)
1 carrot
1 English cucumber 
1 red onion
1/2 c slivered almonds
2 T sesame seeds


Prepare thin noodles or rice and set aside.


Sauce
2 T roasted garlic, mashed
2 T Soy sauce
1/2 c water
1/2 c honey
2 t  Apple cider vinegar
1 t cornstarch 
Mix and set aside.

Bake chicken on parchment paper in a preheated 450 degree oven for 16 minutes.
Cut into bite size pieces.
Set aside.
Drizzle olive oil into large skillet and heat.
Add veggies and stir fry a couple of minutes.
Add cooked cut up chicken and cook another couple of minutes.
Add sauce, stirring to cover chicken and veggies.
Add nuts and sesame seeds.
Remove from heat.
Serve over noodles or rice.

White Balsamic Vinegar Greek Fig Preserves and Bacon Unexpected CheddarStuffed Pork Tenderloin

1 Golden Rotisserie flavored pork tenderloin

1/4 c Greek Preserves, Costco
6 slices crisp cooked bacon
1/2 c sliced Unexpected Cheddar, Trader Joe's
2 T White Balsamic Vinegar

Split tenderloin down the middle, being careful not to cut all the way through.
Flip over and pound with meat mallet.
Set aside.
Take the preserves and thin down with the balsamic vinegar.
Coat the inside of the loin with the mixture.
Slice the cheese into thin pieces, place on top of fig mixture.
Crumble bacon on top.
Flip the two sides one on top of the other.
Cut lengths of cotton kitchen twine and start tying the loin to secure its shape and to keep the filling on the inside.
Sear in a skillet with 1 t olive oil and 2 T clarified butter.
Bake on a rack in a water filled pan, preheated 400 degrees for 30 minutes and flip then 10 minutes, should be 160 degrees internal temp.
Let rest 15 minutes covered loosely with foil.
