2-3 ground seasoned chicken patties or (1-1-/2 c ground chicken seasoned) 

I used frozen patties I keep made up for burgers

1 t olive oil

Brown and chop up

Place in plate 

1/4 c chopped button mushrooms 

2 large green onions, chopped 

1 t olive oil

Using same skillet chicken was cooked in

Add oil and veggies

Sauté 

Add 

1/4 c half and half 

1 c milk

1 tiny can chopped hatch chilies

1/2 c water

Sauté until slightly reduced

Add cooked ground chicken 

Season with salt, pepper and toasted cumin

Add 

1/2 c Velveeta, chopped 

1/4 c pepper Jack cheese, shredded

1/4 mozzarella, shredded

Stir until cheese is melted 

Sprinkle with fresh cilantro
