Fire Roasted Red Pepper and Mushroom Chicken Protein and Fiber Bowl

Cooked Sticky Rice


5 Boneless skinless Chicken thighs

Seasoned with kosher salt, pepper and smoked paprika 

1t bacon grease

1 t clarified butter 

Sauté thighs in grease/butter

Until you reach an internal temp of 165 

Set aside to thinly chop


Cooked veggies 

1/2 c sliced Onion

1 T roasted Garlic 

1/2 c sliced Mushrooms

1/4 c Roasted red bell peppers ( I make my own)

Heat skillet chicken was cooked in (it still has enough grease)

Add veggies 

Sauté 2-3 minutes until tender

Add chicken 

Sauté 1 minutes 

Add chicken bake in, stir and cut off heat


Raw Veggies 

1 c Thin shredded Red cabbage 

1 c Thin shredded Green cabbage 

1 c Thin slice Onions

1 c Thin slice Cucumbers 

1/2 c Chopped Tomatoes



1 c Shredded Mozzarella cheese

1 c seasoned garbanzo beans(seasoned salt and Mrs. Dash table blend)



Dressing

1/4 c Olive Garden Italian dressing 

1/4 c Dukes Mayo

1 T Honey 

1/2 t coarse black pepper 

Whisk
