Pan Fried Cajun Salmon with Parmesan Cream Sauce

 


 

 

 

 

 

 

 

 

 

 

 

Isaiah 46:8-10


    [8] “Remember this and stand firm,

        recall it to mind, you transgressors, 

    [9]     remember the former things of old;

    for I am God, and there is no other;

        I am God, and there is none like me, 

    [10] declaring the end from the beginning

        and from ancient times things not yet done,

    saying, ‘My counsel shall stand,

        and I will accomplish all my purpose,’



3-4 Salmon Fillets

2 t Old Bay or any Cajun seasoning 

1 t smoked paprika 

1/2 t kosher salt 

1 T light Olive oil

1 T butter 

1/4 c onion

1/4 c red bell pepper

1/4 c green onions

2 T roasted garlic

1/4 t black pepper 

1/4 c cream 

1/4 c chicken stock 

2 t fresh lemon juice

1/2 t Old Bay

1/2 c grated Parmesan 

1 T parsley


Pat Salmon dry with paper towel 

Heat oil in medium skillet over medium heat 

Add Salmon skin side up and cook 3 minutes 

Flip and cook 3 more minutes 

Remove to plate and put in oven to keep warm 

Add butter to skillet 

Add veggies and sauté until tender

Mix cream, chicken stock and lemon juice together, pour in skillet 

Add Parmesan 

Reduce to half and add Salmon back

Sprinkle with parsley 

Serve with rice and candied sweet potatoes

Spoon Parmesan cream over Salmon and over the rice
