Mexican Style Pan Fried Salmon

3 salmon pieces skin on


Cilantro Lime Crema

1/4 c Mayo

1/4 c sour cream

1 T fresh lime juice

1/2 t lime zest

1 T fresh chopped cilantro 

1/4 t Kosher salt

1 T roasted garlic 

1/2 t toasted cumin

1/2 t sugar

Mix and set aside

Rub for salmon

1 t oregano 

1 t garlic granules 

1 t onion powder

1 t smoked paprika 

2 t Old Bay

1 t salt

Dry salmon with paper towel 

Put rub on non-skin side


For pan frying

1 T olive oil 

1 T clarified butter 


Add butter/oil to a large skillet

Heat to medium heat 

Add Salmon skin side up

You should hear sizzling 

Seasoned side will brown creating a wonderful blackened coating

Heat 3-4 minutes flip and repeat 

Cook to your preference 

Do not over cook

6-8 minutes total cook time should be perfect

Salmon should flake

Internal temp 130-140 degrees
