Puff Pastry Birria Chicken Empanadas

Birria Chicken*(freezes great and tons of uses)


Puff pastry thawed ( I used half)

Flour parchment sheet

Roll out out Pastry so you can cut out 10- 4 inch circles

Put 1 heaping T of filling on half of circle

and put egg white on the other. 

Pinch seams together and crimp with fork.

Using shears cut 2 slits in top.

Set on parchment lined and non stick sprayed sheet. 

After 10 empanadas are filled and sealed,

brush with egg white.

Bake preheated 425 oven for 17-18 minutes until golden brown.

1 Bell pepper

1 Jalapeño 

1 Leek

1/2 t sugar

Salt and pepper

1/2 T olive oil

Sauté and set aside to cool.


1 egg white


1/2 c Quesadilla cheese

1 heaping T spread cream cheese

1-1/4 c Birria Chicken 

Pepper Leek mix

Mix cooled ingredients together to make filling.
