Pasta with Fennel Onion Sausage Ragu

1/2 of a Fennel bulb,chopped coarse

1 T Fennel seed

1/2 of an Onion, chopped coarse


Add to food processor, pulse 10 pulses


28 oz whole Tomatoes process 1 min


2 lbs link sweet Italian sausage, casing removed, process 10 seconds


Heat 1 T olive oil, add sausage.

Cook 10-15 minuted, add veggies and 1/2 t salt. Cook 5 min, add 2 T tomato paste, 4 T roasted garlic, 1-1/2 t dried oregano. Stir. Cook 30 seconds, add 3/4 dry red wine, cook down for 1 min, scrape bits. Add processed tomatoes and 1 c water. Low heat 45 minutes uncovered


Pasta, 1 lb bow tie pasta 

4 qt water 

1 T salt

Cook al dente 


Reserve 1 c pasta water

Add meat sauce to pasta, add 1 c pasta water to pasta and meat sauce, add Parmesan and a drizzle of olive oil
