Caramelized Onion Dip

































And I will lead the blind in a way that they do not know, in paths that they have not known I will guide them. I will turn the darkness before them into light, the rough places into level ground. These are the things I do, and I do not forsake them.  - Isaiah 42:16

1 diced onion
1 T butter
1 T olive oil
1-1/2 c ricotta
1/8 c buttermilk
1/2 c Mayo 
1 t dill
1 t roasted garlic
Splash of white wine
Black pepper

Heat butter and oil, add onions, garlic and cook on medium heat until lightly golden. 
Cool onions.
Stir in the ricotta, Mayo, buttermilk and white wine.
Add a few turns of cracked black pepper and the dill.
Chill for a few hours.
Serve with potato chips.
