Kicking Good Creamer


                                                                                                           


Luke 18:1

1 And he told them a parable to the effect that they ought always to pray and not lose heart.




1 t ground ginger
1 t ground cinnamon
1/2 t ground nutmeg
1 t ground allspice
1 t ground cloves
1/2 c heavy cream
1/4 c Baileys, the original flavor
1/4 c  blue agave

Mix all ingredients well.
Add to your favorite coffee.
I used 3 T per cup of coffee.
This made 1 cup of creamer.
Shake before each use and keep refrigerated.
This is good warm or cold!

For a fast and tasty cup make a cup of instant espresso, I use Ferrara from Whole Foods.

Spicy Pork Carnitas

3 Blessed be the God and Father of our Lord Jesus Christ! According to his great mercy, he has caused us to be born again to a living hope through the resurrection of Jesus Christ from the dead, 
4 to an inheritance that is imperishable, undefiled, and unfading, kept in heaven for you, 
5 who by God's power are being guarded through faith for a salvation ready to be revealed in the last time.




4 pound boneless pork butt, trimmed and cut into 2 inch pieces
1 1/2 t smoked salt
3/4 t pepper
1 t ground cumin
1 leek, sliced
2 bay leaves
Splash Jim Beam
1 t dried oregano
1/4 c fresh chopped parsley
1/4 c fresh cilantro
1 chopped jalapeno
2 T lime juice
2 C water
1 medium orange quartered (juice and halves)

Use flour tortillas for serving.

Place oven rack middle position and heat to 325.  Combine all the ingredients in a large Dutch oven. Bring the mixture to a simmer over medium-high uncovered.  Once it simmers, cover pot and transfer it to the oven.  Cook until the meat falls apart, 2 hours.
Remove the pot from the oven and turn on the broiler. Remove the meat from the pan and place it on a large foil-lined pan. Place pot over high heat on the stove and boil  liquid until thick about 20 minutes. Reserve the cooking liquid. Add meat back into liquid.
Taste and add additional salt and pepper. Place pork back on pan in a single layer. Brown the edges until crisp, about 10 minutes.

Party Sandwiches

 1/2 stick melted butter
 1 T Dry mustard
 1 T  Worcestershire sauce
 1  poppy seeds
 1 T minced onions
 12 mini sandwich rolls
 1/2 pound shaved deli ham or roast beef
 1/2 pound shaved Swiss cheese


Directions

Preheat oven to 350 degrees. In a bowl, mix together butter, dry mustard, Worcestershire sauce, poppy seeds, and onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the baking dish. Layer about half the ham onto the rolls cut bottoms. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls. Bake until the rolls are lightly browned and the cheese has melted, about 15 minutes. Slice into individual rolls to serve.

Spicy Rotisserie Chicken Cakes

1/2 rotisserie chicken minced in food processor
1/4 c chopped fresh flat leaf parsley
3 T mayo
2 large whites
1 shake chipotle Tabasco
1 c Panko
Salt and pepper to taste
1 t Cajun seasoning
2 cloves roasted garlic

Combine all ingredients.
Make into 6 patties and fry in a little oil.
Serve with smoky rémoulade recipe found on this blog

Asian Style Pork Tenderloin

7 then the LORD God formed the man of dust from the ground and breathed into his nostrils the breath of life, and the man became a living creature.

Pork tenderloin, slit and pounded
1/4 cup soy sauce
1 T honey
1 T brown sugar
2 roasted garlic cloves
1/2 of a leek, sliced
1 t ginger
1/4 t cinnamon
1 t Jim Beam
1/4 c toasted sesame seeds

Roasting liquid recipe:

1/2 c red wine
1/2 c water

In a Ziploc bag, marinate 2 hours.

Sear loin in sesame oil.
Roast on rack with red wine-water mixture in bottom.
Tenderloin is done when internal temp reaches 145 degrees.

Sprinkle with toasted sesame seeds.

Let loin rest for 10 minutes before slicing.

6 c Crispix
3 c Wheat Chex
1 c pecans
1 c peanuts
1 stick (melted Butter)
3 Tablespoons Worcestershire Sauce
5 shakes smoky chipotle Tabasco
3 T Worcestershire Sauce
1 clove toasted garlic, mashed and added to melted butter
1 T Lawry's Seasoned Salt
1/4 teaspoon Onion Powder)

Bake on 250 degrees for 1 hour, stirring every 15 minutes. Enjoy!!
