Miss Dissie's Indian Fry Bread






19 They went out from us, but they were not of us; for if they had been of us, they would have continued with us. But they went out, that it might become plain that they all are not of us.

This was absolutely delicious, made honey butter and slathered it on while it was still warm!!!
You can slice these or just pull a chunk off!!
Theses would be good with cream cheese and fig preserves!

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon seasoning salt or 1 teaspoon table salt
1 cup steaming tap water ( I used warm tap water)
vegetable oil (for frying)





Mix ingredients together with a fork in a medium bowl. (will be sticky).
Liberally grease your hands with vegetable oil and shape dough into a ball. Leave dough in bowl and cover with a towel and set in warm place for atleast 20 minutes, but leaving longer makes the bread fluffier.
When you are ready to make the bread, heat vegetable oil, atleast 1 inch deep or deeper in a frying pan or electric skillet. (around 375 degrees) Test a small ball of dough in grease, it should float in grease, not sit on the bottom, if it doesn't immediately float, oil is not hot enough.
When oil is ready, grab a ball of dough a little bigger than a golf ball and stretch out in your greased hands until dough is flattened out about the size of a large cookie. Poke a small hole in the center of the dough with your fingers, and carefully lay in the hot oil.
Let dough brown to a golden brown before turning over and frying other side.
Drain on paper towels and serve immediately.

Instant Pot Meatballs with Multiple Uses






1 That which was from the beginning, which we have heard, which we have seen with our eyes, which we looked upon and have touched with our hands, concerning the word of life-

These are easy and delicious!!!
They could be used in many different dishes!!


1 & 1/2 lbs. 85% lean ground beef( I used Sprouts)
1/8 c panko bread crumbs
1/8 c fresh cilantro
1 diced shallot
1/8 c whole buttermilk
2 T double concentrated tomato paste( I used Cento)
1/4 c Parmesan Reggiano, grated
1/4 c mascarpone cheese( I use Trader Joe's) 
1/4 t salt
A few turns of cracked black pepper
Drizzle of olive oil and 1 t clarified butter

Add oil and butter to instant pot and heat on the sauté setting.
Add enough meatballs to cover the bottom, I froze the rest to use later.
After they are slightly browned, change setting to meat and cook 20 minutes on high pressure.
Take the pressure off naturally.
Reserve some of drippings for Swedish Meat Balls.
Remove and serve.

I used part of my batch to make Swedish Meat Balls.
Cook 1 1/2 cups of egg noodles and set aside.
Take 1/8 c drippings and add to pan.
Heat and add 1/2 c Sweet Marsala.
Cook a couple of minutes, stirring continually.
Add 1 c sour cream, 1/2 c heavy cream and 1/2 c half and half.
Whisk until thickened. 
Add a pinch of nutmeg, salt and pepper, stir.
Then add the cooked meatballs and cooked egg noodles.

Layered Pimento Cheese Ham and Mushroom Potato Bites





For God has not called us for impurity, but in holiness. - 1 Thessalonians 4:7








1 c Pimento cheese
1/2 c diced Ham
1 small onion, diced
4 baby button mushrooms, diced 
10 medium Baby Yukon Potatoes
Smoked salt 
Cracked black pepper

Garnish
Dried dill



Sauté the onions, mushrooms and ham in a tiny amount of olive oil.
Set aside. 
Cook the potatoes covered in the microwave 3 minutes on each side. Flip and cook an additional 3 minutes.
Let cool until able to handle.
Cut in half lengthwise.
Scoop out some of the potato leaving a good layer of potato to accommodate the filling.
Reserve potatoes to mix with the pimento cheese. 
Mash the potatoes and add the pimento cheese.
Salt and pepper the potato skins.
Spoon the meat mixture into the skin and finish with the potato pimento cheese mixture.
Bake in a preheated 425 degree oven for 20 minutes.
These are the bomb!!!

Asian Pork Burnt Ends

Pork roast, boneless shoulder, cut into chunks

Marinade
1/4 c olive oil
1/2 c sweet chili Thai sauce
1/4 c Hoisin sauce
1/2 lime, squeeze for juice 
A few shakes of hickory liquid smoke
Smoked salt
Cracked black pepper

Marinate in a ziploc overnight or longer.
Place in a 13x9 foil pan along with marinade.
Bake in a preheated 400 degree oven for 30 minutes.
Kick heat up to 425 degrees and flip chunks over.
Bake another 20 minutes, internal temp should be 150 degrees.
Remove from oven, I used toaster oven. 
Cover tightly with foil and let rest for 20 minutes.

Slightly Spicy Pimento Cheese Egg Whites

Egg whites, I use All Whites
Pimento cheese, I use Palmetto Original

Cook your desired amount of egg whites, season with smoked salt and cracked black pepper, add desired amount of pimento cheese while eggs are not quite set. Stir gently.
Serve and be prepared for yummy!!

Scratch Fresh Tasting Marinara Sauce






Let all that you do be done in love. - 1 Corinthians 16:14







1 can Italian Whole Tomatoes ( I used 28 oz. size Cento)
1/2 c water
6 cloves garlic ( I use roasted) mash it with a fork
1/8 c olive oil
Fresh herb mix, 1 t of each (oregano, lemon thyme, basil, Rosemary)
1 T Sugar
1/4 c Red wine
1/2 c Parmesan Reggiano
1/2 t Red pepper flakes
Pepper, a few turns
1 T Fine Kosher salt

Add tomatoes to a bowl.
Squish tomatoes with hands.
Add 1/2 c water.
Heat oil in pan and add Garlic.
Cook one minute.
Then add tomatoes and water.
Add all seasonings, herbs, sugar, wine and cheese.
Simmer for 15 minutes.
Serve over cooked pasta.

Instant Pot Pearl Onion Pot Roast

Chuck Roast, cut into chunks
4 T Clarified butter
1/2 bag frozen Pearl onions
Double strength tomato paste
2016 Rub (recipe this blog)
Salt, to taste
Pepper, to taste
2 T Worcestershire sauce
1 t Mesquite Liquid smoke
1/2 c water

Place cut up meat in a ziplock bag.
Season meat, add liquid smoke and Worcestershire sauce, squeeze bag and flip meat around.
Place butter in pot, turn on sauté and heat.
Add meat and sear.
Add onions and water.
Change setting to meat, cook 60 minutes under pressure.
Let pressure naturally release.

Lemon Pepper Asparagus

1 bunch tiny asparagus 
Lemon pepper seasoning
Garlic granules
1/2 t Clarified butter
Olive oil 
Smoked salt

Toss asparagus in oil.
Season to taste.
Add clarified butter to skillet and toss until done.

Pesto Sour Cream Chicken Casserole







So now faith, hope, and love abide, these three; but the greatest of these is love. - 1 Corinthians 13:13







2 c Rotisserie chicken, pulled or chopped
1 T Pesto
1/2 c Sour cream
1 can Chicken soup
Salt and pepper

Topping
1/2 c Manchego Cheese
1/2 c Panko
1/2 Fried onions, crushed

Mix casserole ingredients together and place in a 13x9 pan.
Add topping.
Bake 350 degrees for 30 minutes.

Dill Butter Burger






If I give away all I have, and if I deliver up my body to be burned, but have not love, I gain nothing. - 1 Corinthians 13:3








1 lb. Hamburger (85% /15% I get mine from Sprouts)
Dried dill
4 t Butter
Seasoned salt
Slider size buns

Toppings
Cheese of your choice
Onions, sliced really thin
Tomatoes, sliced really thin

Make slider size burgers, put a deep thumb print in the top of the burger to prevent shrinkage.
Season burgers, on both sides, with dill and seasoned salt.
Melt butter, add burgers to the butter and cook covered on medium heat.
Cut off heat.
Cover and steam bun on top of burger.

Pound Cake Ice Cream Cake






16 For if I preach the gospel, that gives me no ground for boasting. For necessity is laid upon me. Woe to me if I do not preach the gospel!

So easy and so delicious!!!

Loaf size pound cake, got my at a bakery
Ice cream of your choice, I used Rocky Road
Toppings of your choice, flavored syrup, crushed candy, nuts, crushed cookies, cereal etc., I used dark chocolate syrup and almonds


Let ice cream soften. 
Fill loaf pan with plastic wrap.
Cut cake in half or thirds filling each layer with ice cream and toppings.
I cut mine in half.
Top with ice cream syrup and nuts.
Wrap in plastic wrap.
Freeze for at least 6 hrs.

Really Good Marinade

1/3 c soy sauce
1/2 c olive oil
1/3 c lemon juice
1/4 c Worcestershire sauce
1 1/2 T Garlic granules
3 T basil
1 1/2 T parsley
1 t white pepper
1 t roasted garlic, smashed 
1/4 t smoky chipotle hot sauce

Mix well, I only used 1/2 of it, add meat, I used 2 filet, they were delicious! 
Refrigerate the rest!

Garden Green Onion Bacon Ranch

1/2 pgk. of Hidden Valley Garden Green Onion dry dip
6 slices fried crispy bacon, diced
2 T Mayo
1/8 c buttermilk
2 T sour cream
1/8 c olive oil, whisked in after other ingredients are incorporated 

Bacon Fried Chicken and Niblet Corn Mandarin Orange Tossed Salad







For no one can lay a foundation other than that which is laid, which is Jesus Christ. - 1 Corinthians 3:11







Bacon grease and olive oil
5 Chicken tenders, season, floured and fried in oil and grease

1 Romaine heart, cleaned and chopped
1/2 English cucumber, cut in half and chopped
1 Tomato, chopped
1 ear fresh cooked corn, shave off cob
1 small can Mandarin oranges, well drained 

1 recipe of Garden Green Onion Bacon Ranch(recipe this blog under the dressing tab)


Prepare chicken and fry.
Assemble salad, chop chicken and place dressing on top of salad.
Serve with the above salad.

Java Beef Tips in Java Marinade

1 filet sliced thin and placed in Java marinade for 1 hr.

Olive oil for sautéing 


Java Marinade

1 used coffee pod, opened
1/2 c Balsamic vinegar
2 T olive oil
1 Shallot, diced
2 T roasted Garlic, mashed
3 T honey
1 t fresh lime
Salt and pepper to taste

Mix in a ziploc. Add chicken or beef and marinate for 1 hour.

Instant Pot 60 Minute Mexican Pork







9 Then the LORD put out his hand and touched my mouth. And the LORD said to me, "Behold, I have put my words in your mouth. 
10 See, I have set you this day over nations and over kingdoms, to pluck up and to break down, to destroy and to overthrow, to build and to plant."  - Jeremiah 1:9-10







3 1/2 lb. Pork Shoulder Roast, fat trimmed and cut into 1/2 inch chunks
1 t clarified butter
1 Onion, sliced 
2 T roasted mashed Garlic
4 T fresh Cilantro, chopped
1/8 c Olive oil
4 T c 2016 Rub, this blog under rub tab
1 T Mesquite liquid smoke
2 T Worcestershire sauce
Kosher Coarse Salt, to taste
Cracked black Malabar Pepper, to taste
1 t Toasted cumin
1/2 c orange juice

Place pork in bowl.
Toss pork in oil.
Season with salt and pepper.
Throw on rub and toasted cumin.
Let sit 30 minutes

Heat instant pot on sauté setting, add 1 t clarified butter and toss in garlic, fresh cilantro and onions.
When onions are soft toss in pork and add liquid smoke and Worcestershire sauce.
 Cook 10 minutes until pork is browned.
Add orange juice.
Change instant pot setting to meat, place lid on and lock, set clock for sixty minutes and turn to pressure setting.
After 60 minutes, let pressure off and remove top.
Drain most of the juice off and shred pork.
Serve meat topped with slaw on slider buns.

Honey Sesame Beef and Broccoli







Then the LORD said to him, "Who has made man's mouth? Who makes him mute, or deaf, or seeing, or blind? Is it not I, the LORD? - Exodus 4:11







2 c Thin sliced Beef( I used filet)

Marinade for beef
1/8 c Honey 
1/8 c olive oil
1/4 c Soy sauce
1 t Toasted sesame oil
2 T Sesame seeds
Marinate beef in sauce for 30 minutes.
Stir fry until beef is done.
Set aside.

Stir fry these and then add beef back in.
1 t clarified butter
1 Leeks or onions
1 c Broccoli florets


Add before serving over cooked rice and 1/2 c Peanuts
