Pork Tenderloin Stuffed with Pimento Cheese Rice and Veggies







For no prophecy was ever produced by the will of man, but men spoke from God as they were carried along by the Holy Spirit. - 2 Peter 1:21








Rotisserie flavor pork tenderloin
1 c Bird's Eye Steam Fresh Chicken Flavored Rice and Veggies
1/2 c Pimento cheese
Salt and pepper to taste

Slice loin, pound and fill.
Tie with five lengths of kitchen string.
Salt and pepper outside.
Sear in oil.
Place on rack on top of foil pan with 1 c water and bake 350 degrees for 45 minutes or until internal temp is 160 degrees. 
Let rest 15 minutes, remove string and slice.

Cheater Dark Chocolate Chunk Cannoli Made With Pizzelle Waffle Cookies

Pizzelle cookies (Costco)
Wrap cookie in a damp paper towel, microwave 30 seconds, unwrap and mold around thick handled kitchen tool, a wooden dowel or any circular 1/2 inch. You can only do one at a time.
You have to work quickly because they cool fast.


Filling
Small Ricotta cheese(15 oz.) place in colander, over a bowl to drain, cover and refrigerate for 1 hr
1/2 c Dark chocolate, chopped
1/4 c Sliced almonds
1/4 c Powdered sugar
1 T Vanilla
1 T Whiskey
1 c Cool whip 

Mix well, refrigerate until firm.
Keep filling in fridge and only fill cookies when you are going to eat them.
They will get soggy!

Asian Ground Pork Burger with Sesame Slaw





1 O LORD, you have searched me and known me!

1 1/2 lb. Ground pork
1 Diced Apple
3 green onions, chopped, greens tops and white bottoms
3 T Fresh Ginger
1 t fresh Tumeric
4 T soy sauce 
2 T sweet chili Thai sauce
2 T Mirin 
1/2 c panko bread crumbs

Form into patties and place in freezer 30 minutes 
Grill until 160 degrees internal temp.
To serve add sesame slaw ( recipe under the slaw/salad tab) and a toasted bun.

Sesame Slaw

1 c shredded Cabbage
1/4 c shredded Onion
1/2 of a Cucumber, really thin sliced
1 small Carrot, grated

Dressing
1 t apple cider vinegar
1 T Sesame oil
3 T Soy sauce
1 T Sesame seeds
1/8 c Honey
1/2 t Cilantro
Whisk together.

Zucchini and Pasta Noodles






23 for all have sinned and fall short of the glory of God,
24 and are justified by his grace as a gift, through the redemption that is in Christ Jesus,

3 small Zucchini, cut into Zoodles
2 c cooked angel hair low carb pasta
Drizzle of Olive oil
2 t Lime juice
1/2 t Tuscan seasoning

Add oil to skillet, sauté zoodles, when zoodles are done add juice, seasoning and pasta.
Serve with chicken Parmesan.

Manchego Cheese Biscuits






He himself bore our sins in his body on the tree, that we might die to sin and live to righteousness. By his wounds you have been healed. - 1 Peter 2:24







2 1/2 c biscuit mix
4 T butter cut in 1/8 inch bits
3/4 c Buttermilk
1/2 t Tuscan seasoning
1 c  Manchego cheese

Biscuit brush liquid to use before baking
Fresh parsley
2 T Butter
Melt butter and add parsley.

Into the biscuit mix, add cold butter bits and mix gently.
Next add cheese, seasoning and milk.
Mix with hands until the mix is moistened.
If too dry add half and half by or milk teaspoon full until just moist. 
Hand roll into golf ball size, slightly flatten and give top butter wash.
Bake preheated 400 degree oven for 15-20 minutes.

Nana's Carrot Cake

1bowl
3 eggs
1 1/4 c oil, I used olive oil
2 c sugar
Mix well using a wooden spoon.

2nd bowl
2 c AP flour
1 T baking soda
1 1/2 t baking powder
1/2 t salt 
1 t cinnamon 
Mix well using a whisk.

3rd bowl
2 c grated carrots
1 c coconut
1 c chopped pecans
1 c crushed pineapple with juice
1 T vanilla 
Mix well using a wooden spoon.

Add bowl 2 ingredients to bowl one a little at a time. 
Mix well using a wooden spoon.
Add bowl 3 ingredients to the bowl with bowl 1 and 2 ingredients.
Mix well using a wooden spoon.


Bake 350 degrees for 35-40 minutes using 2 greased cake pans.
Cool before frosting.
I used a 13x9 pan and cooked 50 minutes and the middle was runny.
I just cut out the small amount and discarded it.


Frosting
1 stick softened cream cheese
1 12 oz. cool whip, thawed
3 T powdered sugar
Mix with a mixer.
This frosting is not real sweet but you could increase the powdered sugar.

Coq Au Vin

8 Boneless chicken thighs
1 Onion, sliced
2 Carrot, matchstick cut
1 clove Garlic, diced
6 Mushrooms, sliced
6 slices Bacon, diced
2 T tomato paste
Salted Butter
Fresh Rosemary
Fresh lemon Thyme
1 1/2 c Cabernet Sauvignon, reserve 1/2 c for cooking
1/2 c Water
1 t Chicken base seasoning 
1 T Flour
Salt and pepper 


Add 1 c of wine to a ziplock bag and add chicken.
Burp air from bag and let chicken marinate for 30 minutes to 1 hr.
Prepare veggies.
Heat Dutch oven, add diced bacon.
When bacon is done, add veggies. 
When veggies are done, remove them and add butter, salt and pepper chicken and sear chicken then add veggies and flour back in.
Add all liquids, tomato paste, seasoning, and herbs.
Place in preheated 350 degree oven and cook 30 minute, uncovered.
This was delicious, a very deep rich sauce that pared well with the chicken.

Apple Pimento Cheese Kale Andouille Sausage Stuffed Pork Loin

1 Applewood Smoked Pork Tenerloin
1 c Pimento cheese
1 Leek, chopped
1 c Kale 
1 Apple, chopped
1 T Roasted Garlic
1/2 inch piece Andouille sausage, diced
2 T Ghee, clarified butter
Smoked salt, to taste
Cracked black pepper, to taste
Kitchen string

Slice tenderloin down the middle without cutting all the way through.
Open up and lay flat, cover with plastic wrap and place on a cutting board.
Pound on one side then flip and repeat.
Set aside.
Sauté the andouille, apple, leeks and garlic in the ghee, cool.
Add this sauté mixture to the pimento cheese and then spread on one side of the pork, roll and tie about every 2 inches.
Salt and pepper and sear off in a skillet. 
Bake on a rack sitting on a foil pan that has 1 c of water in the bottom.
400 degrees for 45 minutes.
Wrap in foil and let it sit 20 minutes before cutting.
Using scissors, clip string and remove.
This was delicious and made great sandwiches the next day.

Left over idea:
Fry 4 slices of bacon.
Set aside. 
Add some pieces of the pork roll to bacon fat and fry to just heated.
Toast 2 croissants.
Add the bacon and pork to the croissants. 
Yum!!!

DIY Refried Bean Mexican Layered Dip






18 But what God foretold by the mouth of all the prophets, that his Christ would suffer, he thus fulfilled.

20 that times of refreshing may come from the presence of the Lord, and that he may send the Christ appointed for you, Jesus,

Layer 1
1 recipe of DIY Refried beans( this blog under vegetable tab)

Layer 2
Sour cream mixed with 2 T taco seasoning

Layer 3
Avocado cream layer
2 small ripe avocados
1/2 onion, diced
1/4 c salsa
Pinch of garlic granules 
1/2 of a lime juiced
Salt and pepper to taste

Layer 4
Chopped tomato layer

Layer 5
Black olive layer

Layer 6
Grated Manchego cheese layer 

DIY Refried Beans

Any can of beans, pinto, navy or black, drained

2 T Olive oil
1/2 of a Onion, diced
1 T roasted Garlic, smashed 
1 t Cumin
1/2 Lime, juiced
1 t Cilantro 
1/2 t Smoked paprika
Smoked Salt and pepper to taste

Heat oil in skillet and add onions and garlic.
When they are soft add well drained beans.
After they slightly boil, mash.
Add all seasonings, and juice.
Take off heat and cool.
If they are too dry, add a little oil and water.
I'm making Mexican Layered Dip with mine.

Lloyds Knock Off Onion Strings






14 But you denied the Holy and Righteous One, and asked for a murderer to be granted to you,

1 really large onion, sliced and separated into rings
Milk to cover rings
Few shakes of Worcestershire sauce in the milk
1 1/2 c Seasoned Flour( AP flour and seasoned salt)

Oil for frying( I used olive oil in my Fry Daddy)

Cut onions into thin rings.
Soak in milk spiked with Worcestershire sauce.
In a 13x9 pan place the flour.
Take a fork full of rings out and drop into flour.
Fry in the hot fryer.
Drain.

Instant Pot Chicken Sage Parsley Cream Cheese Stuffed Cabbage






But if anyone does not provide for his relatives, and especially for members of his household, he has denied the faith and is worse than an unbeliever. - 1 Timothy 5:8








1 head of cabbage, steamed and separate leaves

Filling:
2 c shredded rotisserie chicken
1 block of room temperature cream cheese
3 leaves fresh sage
2 T diced parsley
1 t garlic seasoning
1/4 c grated carrot
2 mini red bell peppers, diced 


1 c water for bottom of instant pot 
1 c spicy v-8, pour over stuffed leaves
Cracked Black Pepper

Set aside separated steamed cabbage leaves.
Mix fulling ingredients.
Stuff leaves with 2 -3 T of cream cheese chicken mixture according to leaf size.
Put your rack in cooker and add water.
Loosely cover rack with foil.
Spray with cooking spray.
Stack stuffed leaves on top of each other.
Pour v-8 over leaves.
Put top on and bring up pressure.
Set meat setting to 30 minutes.
Take off steam.
To serve, drizzle BBQ sauce over each cabbage roll.
