Easy Scratch Banana Pudding


















43 "You have heard that it was said, 'You shall love your neighbor and hate your enemy.'

1 c sugar
3 eggs

Whisk together.

6 bananas, sliced
Crumbled Bel vita cookies, I used 4 pgks of the cinnamon ( you can use vanilla wafer, Lorna Doons etc)

Layer cookies then bananas, repeat.

2 c milk
2 T cornstarch 
Pinch of salt

Pour all of milk into saucepan.
Whisk in salt and cornstarch, whisk in egg sugar mixture.
Boil on medium whisking until thick then add vanilla.
When thickened pour over cookie banana mixture.
Add cool whip.

Tiny Asparagus and Mini Kumato Tomato Bake

1 batch Tiny Asparagus 
1/2 batch Kumato Minis 
Olive oil
Seasoning salt
Greek seasoning

Topping
Parmesan
Mozzarella 
Canned onion rings
Panko


Cover sheet pan with parchment.
Trim ends on asparagus.
Cut tomatoes in half, leave cut side up.
Drizzle olive oil, season with seasonings.
Crush canned onion rings in your hand and sprinkle over veggies.
Sprinkle both type of cheeses and panko over veggies.
Bake preheated 350 degree oven for 15 minutes.

Sake Glazed Thin Sliced Pork Tenderloin


















"Repent, for the kingdom of heaven is at hand." - Matthew 3:2





1 small plain pork tenderloin, cut into 4 long sections then thin slice 

Sake Glaze
1/8 c low sodium soy
1/8 c Mirin
1/8 c Sake
1 t Chili oil
1/4 c water
1/8 c honey
1 t Sesame oil

Prepare sauce, add meat and let marinate 15 minutes.
Spoon meat out and put on plate.
Reserve sauce.
Add 1 t of cornstarch to sauce and set aside.
Later this will be added to cooked meat and veggies to make a glaze.

Heat oil in pan and add glazed meat.
This cooks in about 10 minutes because it's so thin.
Remove meat to plate, wipe out skillet, add oil and fry veggies.
Stir fry veggies in oil for 5 minutes.


Veggies
Splash Olive oil for frying
2 T roasted Garlic
1 t fresh ginger
2 chopped Baby Bok choy
1 Leeks, sliced thin


Add meat back in along with the glaze. 
Glaze will thicken quickly.
Serve over rice and garnish with peanuts.

Avocado Onion Tomato Jalapeño Relish

1 small Avocado, chunked
1 small Onion, diced
1 t Mayo
1 t yellow Mustard
1 small Tomato, chopped
2 Pickled Jalapeño slices, diced
1 t Sweet pickle relish
Salt and Pepper to taste

Mix together, leaving chunky.
Spread on hamburger, steak sandwich or chicken sandwich.

Cherry Coke Marinated Smoky Pulled Pork


















Give ear to my prayer, O God, and hide not yourself from my plea for mercy!  - Psalm 55:1




Small Boston butt with good fat marbling 
Liter Cherry coke
1/8 c Salt
Favorite rub
1/4 c Water
A few shakes Hickory liquid smoke

In a large bag add the cherry coke and salt.
Cut the butt in quarters and submerge it into the coke-salt mixture.
Put in fridge overnight.
Take butt out and cover with rub.
Add water and liquid smoke to bottom of pan.
Cover with foil.
Bake 350 degrees for 4 hrs or until you are able to pull meat with a fork.
Internal temp should be 200 degrees.

Smoked Sausage and Sauerkraut Potato Soup




















Cast your burden on the LORD, and he will sustain you; he will never permit the righteous to be moved.  - Psalm 55:22





4 Cipolinni Onion, cover with boiling water, let sit 2 minutes, cut top and bottom, peel and cut in half
1 Leek, chopped
2 T Chives
4 red Potatoes, microwave covered 4 minutes each side, cut into chunks
1 c cheddar Cheese
1/2 c Half and half
2 t Parsley 
2 qt Water
1 c Sauerkraut, I used Bavarian kraut 
2 T Chicken base seasoning 
1 link Smoked sausage, cut into chunks and fried
A few turns Black pepper


Fry sausage, onions and leeks.
When leeks are done add cooked potatoes, parsley and chives.
Add chicken base seasoning to water and bring to boil.
Add chicken mixture, cheese, pepper and half and half.
Add kraut.
Simmer until cheese melts.
Yum!

Scratch Steak Sauce On A Filet



















1 O God, you are my God; earnestly I seek you; my soul thirsts for you; my flesh faints for you, as in a dry and weary land where there is no water. 
2 So I have looked upon you in the sanctuary, beholding your power and glory. 
3 Because your steadfast love is better than life, my lips will praise you. 
4 So I will bless you as long as I live; in your name I will lift up my hands.  - Psalm 63:1-4


This was outstanding!!
Makes enough for 4 small filet.

1/4 c orange juice
1 small onion, diced 
1 shallot, diced
1t apple cider vinegar
1 t soy sauce
1 t Worcestershire sauce
1 t red wine vinegar
1 t balsamic vinegar
1 t molasses
1 t chili oil
A few shakes black pepper
1 t diced raisins
1 t chicken base seasoning
1 c water 

Caramelize onions and shallots in the orange juice.
Add the rest of the ingredients.
Bring to boil and simmer 30 minutes.
Cool and put into blender or food processor.
Skillet fry filet on high heat in a tad of olive oil until almost medium and start coating the filet with the sauce.
Flip, sauce and repeat a couple of times.
Remove from heat and cover with foil.
This will burn so don't leave the steak.

Sake Sauced Pork and Beef Stir Fry


















Whoever hates disguises himself with his lips and harbors deceit in his heart;  - Proverbs 26:24


1 small Beef filet, seasoned with salt and pepper
2 Pork chops, seasoned with salt and pepper, pound thin slice 
1 English Cucumber, cut into strips
1 Onion, sliced
1 Shallot, diced
2 T Roasted garlic
1 t Fresh ginger
1/4 c Dry roasted peanuts
Oil for stir frying

Heat oil with the garlic and ginger.
Stir fry meat, remove from pan.
Stir fry shallots, onions, and cucumbers, when tender add meat back in.
Add sauce and peanuts at the end.
Serve over rice.

Sake Sauce:
1/8 c Sake, I used TY KU, from World Market
1/8 c Mirin
1/4 c Soy sauce 
2 T Chiu Chow Chili oil, Love Lee Kum Kee brand, bought at Asian market
1 t Toasted Sesame oil
1/4 c Honey

4 oz. witch hazel


Fill an old spray bottle.
Must be reapplied every 4 hours.

Adobo Smoked Pasilla de Oaxaca Chile Spiced Boneless Beef Short Ribs


















The rich and the poor meet together; the LORD is the Maker of them all.  - Proverbs 22:2




I served half of this on open faced Hawaiian rolls along with chopped tomatoes!!
The next day I used the other half to make nachos.
Both were delicious!!!

4 boneless beef short ribs, chopped into chunks( Costco has these)
2 T olive oil for sautéing 
1/2 t  Adobo rub
Pinch dried Pasilla chiles that have been made into powder in a coffee mill
2 T  double strength tomato paste
1 small onion
1 T roasted garlic 
4 sliced mushrooms
2 Capfuls Jim Beam
1 c water

In the olive oil sauté the adobo seasoned meat, onions, garlic, mushrooms, and Pasilla chilies.
Add whiskey and tomato paste, sauté a little then add water.
Place in a preheated 350 degree oven, covered for 1 1/2 hours.
Check the liquid and if necessary add some more water about half the way through.

Meat Lovers Tater Tot Casserole

1 c chicken, cubed
1 c smoked sausage, chopped 
1 c ham, cubed
1 1/2 c Tater tots, cut in half
1 c Onion rings, crushed

Sauce
1 can cream of mushroom soup
1/2 c half and half
1/2 c sour cream

Topping
1/2 c Onion rings
1/2 c Cheese 
1/4 c Panko


Spread a little of the sauce in the bottom of the casserole pan.
Next add the cut tater tots.
Then the onion rings and the rest of the sauce.
Top with topping and bake 350 degrees for 30 minutes.

Key West Pink Shrimp Pan Fried In Garlic Butter with Kale and AngelHair Pasta



















Let not your heart envy sinners, but continue in the fear of the LORD all the day.  - Proverbs 23:17


1 lb. Key West Pink Shrimp ( at Costco in the freezer section) thaw add salt and pepper
Fresh angel hair pasta ( at Sprouts) cook, set aside, reserve pasta water
2 T roasted garlic
1/2 stick of butter
1 diced shallot
1/2 t oregano
1 c kale
1 t each fresh herbs ( Rosemary, thyme, sage, sweet basil)
Pinch pepper flakes
1/4 c Trader Joe's Unexpected Cheddar, Toscano, Parmesan blend

Heat butter and add garlic, pepper flakes, kale, shallot and herbs.
When shallots are tender add shrimp, be careful not to over cook.
Add pasta water to thicken garlic sauce.
Add drained pasta.

Country Style Gravy


















Be assured, an evil person will not go unpunished, but the offspring of the righteous will be delivered.  - Proverbs 11:21



Meat Drippings, at least 4 T you can add olive oil if needed
1/4 c Flour or more
Smoked Salt, to taste
Cracked Pepper, to taste
1/4 t Garlic
1 c Half and half
1 c Milk

Heat drippings in skillet.
Add in flour to hot drippings.
All the flour should be dissolved by the drippings.
It should look like brownish thick paste.
If you see dry flour, add a little oil.
Add both liquids and seasonings.
Whisk continuously until the gravy thickens.

Chicken Fried Pork Cutlets



















23 And not only the creation, but we ourselves, who have the firstfruits of the Spirit, groan inwardly as we wait eagerly for adoption as sons, the redemption of our bodies.
24 For in this hope we were saved. Now hope that is seen is not hope. For who hopes for what he sees?

1 pork tenderloin, golden Rotisserie flavor, cut into 2 inch chunks and butterfly
3 beaten eggs
2 c flour
Smoked salt, to taste
Cracked black pepper, to taste
A pinch of Tuscan seasoning sprinkled on each side of cutlet 
Olive oil for frying

Take each 2 inch chunk and slice down through the middle being careful not to cut through.
Place in a ziplock and pound flat.
Dip in beaten egg then flour and repeat.
Fry on medium high heat.
These fry quickly.
Reserve some of drippings for country gravy.

Citrus Stir Fry Cabbage and Ham


















1 Fret not yourself because of evildoers; be not envious of wrongdoers! 
2 For they will soon fade like the grass and wither like the green herb. 
3 Trust in the LORD, and do good; dwell in the land and befriend faithfulness. 
4 Delight yourself in the LORD, and he will give you the desires of your heart. 
5 Commit your way to the LORD; trust in him, and he will act.  - Psalm 37:1-5





Small Cabbage, cut like for slaw
1 T olive oil
1/2 t Garlic
2 Ham slices, diced
1/2 of a onion 
Cracked black pepper
1 t chicken base seasoning
Juice of a half of Lime 


Stir fry garlic and onion in oil.
Add ham.
Add cabbage and seasonings.
To finish add citrus juice.

Spanish Smoked Paprika Fried Potatoes and Onions




















37 No, in all these things we are more than conquerors through him who loved us.
38 For I am sure that neither death nor life, nor angels nor rulers, nor things present nor things to come, nor powers,
39 nor height nor depth, nor anything else in all creation, will be able to separate us from the love of God in Christ Jesus our Lord. - Romans 8:37-39




4 Red Potatoes, microwave 4 minutes on each side
1 Onion, sliced
1/2 t granulated Garlic 
Seasoned salt, to taste
Black pepper, to taste
1/2 t Spanish Smoked paprika
Oil for frying


Microwave potatoes.
Let potatoes cool to warm.
Slice whole potatoes into rounds then quarter. 
Remove most of the peel.
Heat oil and add quarters, then season.
Cook a few minutes then add onion.
