Greek Seasoned Chop






There is a way that seems right to a man, but its end is the way to death.  - Proverbs 14:12






6 bone in center cut pork chops
Greek seasoning( I make my own, recipe under seasoning tab this blog)
Seasoned meat tenderizer
Olive oil for frying

Pound chop.
Seasoning both sides with tenderizer, it's salty so go very lightly, then use the Greek seasoning as a rub. 
Bring oil up to medium high heat and add chops, I did 3 at a time cause my non stick skillet is huge.
After they are lightly browned on both sides, cover. 
Cook until temp reaches 140 degrees.
These were delicious!!!


Coconut Flour and All Purpose Flour Biscuits






5 Let the heavens praise your wonders, O LORD, your faithfulness in the assembly of the holy ones!

7 a God greatly to be feared in the council of the holy ones, and awesome above all who are around him?  - Psalm 89:5-7




1 c organic coconut flour
1 c AP flour
6 T butter, cut into 1/8 inch chunks
1/4 t cream of tarter
1 t salt
1 T baking powder 
2 t sugar

Add these after mixing dry ingredients.
1 c buttermilk
Pinch of baking soda


Put all dry ingredients plus the butter in food processor and plus a few times to get the consistency of corn meal.
You will have a few tiny beads of butter, you want this.
Put into mixing bowl.
Add soda to buttermilk and add to dry ingredients.
Mix.
Mixture will be like a cookie consistency.
Pull a small amount of the dough.
Roll out in your hand and pat down.
Bake preheated oven 375 degrees 15-20 minutes.
Outside of biscuit will have crunchy texture but inside will be fluffy.
They will look like a drop biscuit.
These biscuits are delicious with a nutty flavor and a toasted coconut fragrance.

Trader Joe's Inspired Orange Chicken and Shrimp





For what will it profit a man if he gains the whole world and forfeits his soul? Or what shall a man give in return for his soul? - Matthew 16:26








For the marinade and sauce:

1 c chicken broth made from chicken base seasoning, 1 t base and 1 c water
1/4 c orange juice
1 t orange zest
4 T rice vinegar
1/8 c soy sauce
1/2 t turmeric root
1/2 c brown sugar or honey
1/2 t molasses 
3 roasted garlic, mashed
1 T fresh grated ginger
1/4 t cayenne pepper
3 boneless chicken tenderloins, cut into bite-sized pieces
12 shrimp, cleaned and tail off
1 T plus 2 t cornstarch
2 T cold water


For the coating and frying:

2 large egg whites
1 c cornstarch
½ t baking soda
¼ t cayenne pepper
 oil for frying

To make the marinade and sauce, combine the chicken broth, turmeric root, orange juice, orange zest, vinegar, soy sauce, brown sugar or honey roasted garlic, ginger and cayenne pepper in a large saucepan; whisk to blend well.  Measure out ¾ cup of the mixture and transfer it to a large ziploc bag.  Add the chicken pieces to the bag. Refrigerate and let marinate 30 minutes. Bring rest of sauce to a simmer.  In a small bowl, whisk together the cornstarch and water until smooth.  Add the mixture to the saucepan and continue simmering.

For the coating, add egg whites to bowl and whisk. Combine the cornstarch, baking soda and cayenne pepper; whisk to blend, ad bowl. Drain the chicken and pat dry. Dip a few pieces of chicken in whisked eggs then cornstarch mixture, shake and fry. Add towarm sauce.

Homemade Chick fil a Slaw







But, as it is written, "What no eye has seen, nor ear heard, nor the heart of man imagined, what God has prepared for those who love him"-  - 1 Corinthians 2:9




This is the real deal!!!


4 t vinegar
1/4 c sugar
1/4 t dry mustard
1/4 t salt
1 c mayo
2 bags slaw mix, 10 oz size, finely shredded and chopped
1/4 c carrots, finely chopped


Whisk together, vinegar, sugar, dry mustard, salt until sugar desolves. 
Add mayo and whisk.
Add in veggies.
Mix to combine.
Chill 2 hours.

Feta and Baked Greek Veggies







9 The coming of the lawless one is by the activity of Satan with all power and false signs and wonders,

Carrot, cut into 1/2 inch chunks
Onion, quartered
Red bell pepper, cut into strips
Yellow squash, cut into chunks
Zucchini, cut into chunks

Feta

Seasonings:
2 T Olive oil
1 T Greek seasoning
1/2 of a Meyer lemon, juiced
Coarse Kosher salt, to taste
Black Pepper, to taste
1/4 c feta, crumbled


Toss in oil.
Season and squeeze lemon juice, toss again.
Bake 400 degrees for 45 minutes.
Sprinkle with feta.

Greek Style Filet






For Christ did not send me to baptize but to preach the gospel, and not with words of eloquent wisdom, lest the cross of Christ be emptied of its power. - 1 Corinthians 1:17








2 filets
1/4 t Greek seasoning on each side( I make my own, recipe under seasoning tab this blog)
1/2 Meyer lemon, juiced
1 t Clarified butter

Place clarified butter in cast iron skillet.
Heat until hot and add seasoned filets.
Sear on each side.
Squeeze lemon juice on both sides.
Cook until desired doneness.

Greek Boiled Red Potatoes

6 medium red potatoes, quartered
1 t chicken base seasoning
Water just to cover

To finish:
Greek seasoning
1/2 Meyer lemon, juiced
Olive oil 


Boil until fork tender.
Drain and toss in oil.
Season with Greek seasoning and squeeze on lemon juice and toss. 
Salt and pepper to taste.

Broccoli Sage and Chicken Casserole






Arise, O God, judge the earth; for you shall inherit all the nations!  - Psalm 82:8







3 c rotisserie pulled chicken 
1 1/2 c chopped broccoli
1 can cream of chicken soup
1/4 mayo
1/4 c sour cream
1/2 c sharp cheddar
1/2 Meyer Lemon, juiced
3 T chopped fresh sage
1/2 t chicken base seasoning
1/4 c water


Topping
1/2 c sharp cheddar
1/4 c panko
1/4 c canned onion rings


Mix first 10 ingredients together and place in 13x9 greased casserole pan.
Sprinkle topping ingredients on casserole and bake  in a preheated 350 degrees for 30 minutes.

Cinnamon Bun Oreo Cookie Mini Strawberry Banana Trifles

Makes 6 mini trifles

1/2 pgk.cinnamon bun Oreos, crumbled (remove filling out of half)

3 c sliced strawberries 
2 bananas 
1 c sugar
1 c water
1/2 of a Meyer lemon, juiced
1 capful Jim Beam bourbon
Slurry made of 1/4 c water and 2 T cornstarch 

1/2 c chopped candied pecans


Cream topping mixture
3 c heavy cream
1/2 c sugar
1 T vanilla 


Heat the sugar, water, berries, lemon, and bourbon to a light boil.
Add slurry, stir until thickened.
Place in freezer until chilled.

Crumble cookies, remove the cream filling from half of the cookies and discard.
Add cookies to cooled berries.

Make cream topping mixture by whipping the ingredients until stiff peaks form and set aide.

To assemble mini trifles, place a pinch of candied pecans in the bottom of each trifle.
Next add 1/4 c of berry mixture, a few chopped bananas, cream topping and repeat for another layer.
End with a pinch of candied pecans.

A small tortilla has 15 carbs.

Mesquite Greek Rubbed Pork Tenderloin

1 mesquite flavored pork tenderloin, rinse
Greek seasoning
1 13x9 foil pan with high sides


Bake 450 degrees for 45 minutes. 
Turn once during cooking.
Put rub on one side, cook 22 minutes then flip, put rub on the second side and finish cooking.
Internal temp should be 150 degrees.

Hash Brown Smoked Sausage Casserole

1 c hash browns, I use dehydrated
1 c grilled smoked sausage, cut into chunks
1 can cheddar cheese soup
1/4 c sour cream
1/2 t Greek seasoning
3 green onions chopped 
Smoky Chipotle Tabasco 


Topping
1/4 c panko
1/2 c cheese
1/4 c canned onion rings, crushed 


Rehydrate hash browns in hot water for 15 minutes and drain.
Mix all ingredients together except topping items.
Place in a greased pie plate.
Add toppings.
Cover loosely with foil, remove last 15 minutes.
Bake in preheated 350 oven for 40 minutes.

Stir Fry Brussel Sprouts with Bacon and Caramelized Onions






For the LORD gives wisdom; from his mouth come knowledge and understanding;  - Proverbs 2:6





Pgk. of fresh Brussel sprouts, cleaned and outer layers removed, sliced thin
Onion, cut in half, slice and caramelize in clarified butter and olive oil
6 pieces Bacon, fried crisp, reserve 1 T grease
1/2 t Smoked paprika
1 t Dry mustard
1/2 t Sugar
1 T Chicken base seasoning
1 T Red wine vinegar
1/4 c Half & Half


Caramelize onions in oil and clarified butter and drain on paper towels.
Set aside.
Fry bacon crisp, drain and set aside.
Clean sprouts and remove outer leaves.
Slice the Brussel sprouts thin, discard root.
Season with all seasonings.
Stir fry in 1 T bacon grease until tender.
Add half & half and vinegar.
When tender, add bacon and onions.

Peanut Butter Pie in an Oreo Crust

1 prepared Oreo pie crust

1 cream cheese, softened
3/4 c sugar
1 c peanut butter
16 oz. container of thawed cool whip 


Cream sugar, cream cheese and peanut butter together with a mixer.
Stir in 8 oz. of cool whip.
Fill Oreo pie crust, freeze for a few hours.
Frost with remaining cool whip. 
Keep refrigerated.

Broccoli Bacon Corn Casserole






2 O you who hear prayer, to you shall all flesh come. 
3 When iniquities prevail against me, you atone for our transgressions.  - Psalm 65:2-3





1 bag frozen broccoli florets, chopped
1 Green Giant niblets white corn in sauce
1/2 c sharp Cheddar, shredded

1 t chicken base seasoning
2 T Celery, sliced
4 slices Bacon, diced
1 Shallot, diced
1 T Roasted garlic, mashed
1/4 c Mushrooms, sliced
1 t Clarified butter


1/4 c Smoked Gruyere, sliced
1/3 c half and half
1/4 c Cream cheese

Topping
Panko bread crumbs
Crushed Onion rings, canned
Cheddar cheese, shredded


Prepare corn and broccoli in microwave.
Place in greased casserole pan and add 1/2 c cheddar.
Set aside.


In clarified butter sauté shallots, celery, bacon, garlic, mushrooms and seasoning. 
Add to broccoli-corn mixture.

Microwave Gruyere, cream cheese and half & half until cheese is melted, about 2 minutes.
Add to veggie mix and combine.

Sprinkle topping ingredients on casserole and bake 350 for 25 minutes or until browned.
