Mango Blueberry Strawberry Cobbler






Who is a God like you, pardoning iniquity and passing over transgression for the remnant of his inheritance? He does not retain his anger forever, because he delights in steadfast love.  - Micah 7:18








2 mango
1 pint strawberries
3 c blueberries
1/2 c water
1/2 c half and half
1 c sugar
1/2 of a Meyer lemon, juice
1 t vanilla 
1/2 t cinnamon 
1/4 t nutmeg
1/4 t allspice
1/4 t ginger

Topping
1/2 box white cake mix
1 stick butter, melted

Cook all ingredients for 15 minutes.
Cool and place in a 13x9 pan.
Sprinkle dry cake mix over fruit.
Drizzle butter over dry cake mix.
Bake preheated 325 degree oven for 45 minutes.
Serve with ice cream.

Fall Off the Bone Dr. Pepper Ribs

2 -3 racks baby back ribs
Really large bag( Hefty makes them)
2 liter Dr.Pepper 
1/4 c light salt
1 T liquid smoke
Your favorite rub to season after the 24 hr soak

These are lazy man ribs!!!
Cook in a 350 degree oven for 2 hrs.

Cut the two - three rib racks in half.
Take the four or six sections of ribs and place in the large bag, add the salt, liquid smoke and the Dr.Pepper.
Seal and place in fridge overnight.
Pat ribs dry and add rub.
Add 1 c water to large pan.
Place in foil pan on a rack. 
Seal in heavy duty foil.
Bake 2 hrs.
Cover with your favorite sauce.

Honey Sesame Soy Asparagus

Asparagus, one bunch tiny size bottoms cut off
1 t Sesame seeds
1 T Honey, drizzled over while cooking 
1 small bunch Green onions, chopped
1 T Soy sauce 
1 T Olive oil
1/2 t Onion powder
1/4 t Garlic granules 
Tiny pinch of Pepper flakes
Salt and pepper, to taste


Stir fry in oil, the asparagus and onions.
Add all seasoning and sesame seeds and cook, leaving asparagus slightly crunchy.

Stir Fry Super Greens








Proverbs 27
1 Do not boast about tomorrow,
for you do not know what a day may bring.




6 c Kale, Chard, Spinach ( a greens mix I bought at Costco) can eat raw as a salad too
1 onion, sliced
1 T Roasted Garlic
Drizzle of Olive oil for stir frying
1 t Sugar 
Pinch of Pepper flakes
Salt and pepper, to taste
A few shakes of Red wine vinegar

In a large skillet, drizzle oil, heat and add garlic, pepper flakes, salt, sugar, pepper and onion.
Add greens and stir fry until tender.
Drizzle a few shakes of red wine vinegar.
Enjoy!!

Rotisserie Chicken Breast Sandwich on Rosemary Parmesan Bread

1/2 of a Rotisserie chicken breast, pulled
Rosemary Parmesan bread(Costco Bakery)
Tomatoes, sliced
Vidalia Onion, sliced
Smoked Cheddar Cheese, sliced 
Olive Garden Italian dressing, drizzled
Salt and pepper, to taste

Drizzle olive oil on bread, place on grill top and toast, flip and repeat.
Place sliced cheese on one piece of bread to melt.
Start with pulled chicken, next onion, tomato, then dressing and seasonings.
Add a Kosher dill and eat, yummy!!

Cauliflower Broccoli Onion Ring Casserole






Bless the LORD, O you his angels, you mighty ones who do his word, obeying the voice of his word!  - Psalm 103:20




1 head Cauliflower, cut into florets
1 pgk. Frozen Broccoli
1 can Canned onion rings
1 can cheddar cheese soup
1 c Sour cream 
2 T Pimentos 
1/4 c Half and half
Salt and pepper to taste
Mix all together and place in a 13x9 greased pan.

Topping
1 small bag BBQ pork skins, crushed
1/2 c Cheddar cheese
Top casserole with these two items.

Bake 350 degrees for 25 minutes.

Poppy Seed Fruit Topping

13 oz. marshmallow fluff
1 stick cream cheese
1/2 t poppy seeds

Bring cream cheese to room temperature.
Microwave fluff for 20 seconds to soften.
Mix cream cheese and fluff with a mixer.
Sprinkle in poppy seeds.

1/2 Summer Kiss Melon, chopped
1 1/2 c blueberries
2 Mangos, chopped
1 c pitted cherries, cut in half

Assemble fruit and enjoy!!!

Foil Pan Greek Chicken Brats and Veggies






2 Early in the morning he came again to the temple. All the people came to him, and he sat down and taught them.

Marinated Greek Chicken (8 Tenderloins marinated in Italian dressing) cut into inch chunks
1 pgk. beef Brats, cut into bite size pieces
1 Onion, sliced
1 Red Bell pepper, sliced
1 ear fresh Corn, shaved off cob
1 Yellow Squash, chopped in inch chunks
1 Zucchini, chopped in inch chunks
Greek seasoning(season chicken and veggies)
Smoked salt
Cracked black pepper
1/2 Meyer lemon, juiced
Olive oil
1/4 c Unexpected Cheddar, chopped
1/4 c Smoked Cheddar, chopped 

Marinate chicken for 1 hr.
Prepare veggies.
Place veggies on bottom, season, squeeze lemon juice and drizzle oil.
Top with chicken, brats and cheese.
Seal with foil.
Bake 450 degrees for 45 minutes.
Remove foil and drain off juice.
Place pan under broiler until meats browns.
Flip meat over and repeat.

Fried Bologna Pimento Cheese Jalapeño Mayo Burger Sliders

An ej original recipe!

Beef patties, slider size with a whole in the middle to reduce shrinkage ( love Sprouts 80/20 blend) season with seasoned salt
Bologna, fried
Honey Garlic Roasted Jalapeño Mayo, recipe this blog under sauces tab
Pimento cheese, I used Mrs. Strattons
Sweet Slider Buns, I used Pepperidge Farms


Roll burgers into a patty, place a deep thumb print on one side and season.
Fry in skillet covered with a lid.
These cook quickly.
Open bun, add a teaspoon full of pimento cheese on bottom half of bun.
Next 1/2 slice of fried bologna, followed by the burger patty and top with jalapeño mayo, ending with the other half of the bun.
These are insane!!!!

Honey Garlic Roasted Jalapeño Mayo





27 Can a man carry fire next to his chest and his clothes not be burned?

An ej original recipe!

1 T Honey 
1 t Roasted Garlic, mashed
1/4 c Mayo
1/2 Roasted jalapeño, seeded
1/2 onion, sliced
Sprinkle of olive oil
3 slices Bacon, cooked crisp and chopped
1/2 of a Lime, juiced
Smoked Salt and Cracked black pepper 


Roast jalapeño over fire.
I do mine on a gas stove flame.
Sauté onion slices in oil.
When onions are translucent add chopped jalapeño, cooked bacon, smoked salt, cracked pepper and roasted garlic.
Sauté until slightly browned.
Mash with a potato masher.
Cool.
In a bowl, add mayo, lime juice, honey and jalapeño onion mixture.
Perfect on a burger!!!

Nine Layer Chicken Dip

Frito Lay Bean dip, mix in 1t taco seasoning
Sour cream
Salsa
Velveeta shreds, sprinkle lightly
Diced Rotisserie Chicken breast
Onions, diced
Avocado, chopped
Tomatoes, chopped
Cheddar cheese, sprinkle lightly

Layer in order in a pie plate.
Serve with tostado chips.

Fried Zucchini and Yellow Squash

1 Onion, sliced
2 med Yellow squash, chopped 
1 Zucchini, chopped
1 egg
1/4 c Corn meal
2 T Flour
Smoked salt
Cracked black pepper
1/2 t Garlic granules
1 t Parsley
Olive oil for frying

Chop veggies, season, add egg and stir to coat.
Add corn meal and flour, stir to coat.
Place oil in a large skillet, heat and add veggie mixture.
Fry until a crust forms then flip mixture and fry until another crust forms. 
Do this until veggies are soft.

Cracker Barrel Fake Grilled Chicken Tenderloins





"Hear, O Israel: The LORD our God, the LORD is one. - Deuteronomy 6:4




12 Chicken tenderloins
1/4 c honey 
1 c Italian dressing
1 t Parsley
1/2 lime, juiced
1 t Balsamic vinegar

Mix ingredients all together in a ziploc and place chicken in marinade.
Marinate 1 hr.
Pour marinade and chicken in a skillet and cook until chicken is done and has a grilled look.
Most of the marinade will be gone.
