Spicy V-8 Beef Tenderloin Chicken Tortilla Soup

2 c Spicy V-8
2 c Water
Splash of olive oil
1-2 slices left over cooked Beef tenderloin cut into chunks
2 c Rotisserie chicken, pulled
1/2 block of cream cheese, cut into small chunks
1 can rinsed Black beans
1 Onion, chopped
4 multi colored Mini bell pepper
1 t roasted mashed Garlic
Pinch of Cocoa (non sweet)
2 T Chicken base seasoning
1 t cumin
1 t smoked paprika
1 t chili powder
1 t sugar
1 t ancho chili powder
4 small flour tortillas, cut into quarters and then slice into strips

To serve top with sour cream
Sprinkle of parsley, fresh or dried
Sprinkle of cilantro, fresh or dried


Add oil to pot and heat.
Add onions, peppers and garlic, sauté until they are slightly tender and add all seasonings, drained beans and meats.
Then add water, v-8 and bring to a soft boil, then add cream cheese and tortillas.
Cook for 30 minutes.
To serve add sour cream, parsley and cilantro.

Cracked Black Pepper Bacon Mustard Brown Sugar Glazed Wieners

2 pgks. Ball Park Finest Hickory Smoked Beef no nitrate wieners, each one cut into thirds
1 pgk. Low sodium Hormel Black Label bacon, cut in half, you can stretch it if it doesn't fit
Cracked black pepper, I love Malabar found at Costco
Yellow mustard
Brown sugar
Wooden Toothpicks

Bake preheated 350 degree oven on bottom rack for 45 minutes on a parchment lined sheet pan.

Wrap each wiener in bacon, secure with a toothpick.
Pepper.
Shake mustard, draw a line down the wiener and press a pinch of brown sugar into the mustard. 
They will burn so watch toward the end of the cooking time.

Baby Potato Hash For Two






Let them praise the name of the LORD, for his name alone is exalted; his majesty is above earth and heaven.  - Psalm 148:13








12 red and white baby potatoes
1 onion, cut in half and slice
4 tiny peppers, red, yellow and orange, slice in rings
2 slices of left over ham, chopped
1 piece left over beef tenderloin, sliced thin
Seasoned salt
Garlic granules
Fried hard egg


This recipe utilizes Christmas left overs.
It's fast, versatile and delicious!!!
I've made this before using regular potatoes.



Microwave potatoes covered for 3 minutes on each side.
Potatoes might crack, that's fine.
Microwaving ensures crispness.
Cut in half.
Add olive oil to skillet.
Heat oil and add potatoes, cooking 4 minutes, then add meats, onions and peppers.
Fry enough eggs according to how many servings you will have.
I fried two because we were going to eat this 2 days in a row.
To serve place hash on plate and top with fried egg! Yum!!!

Baked Lobster Kale Artichoke Dip






He heals the brokenhearted and binds up their wounds.  - Psalm 147:3







4 oz. room temp cream cheese
1/4 c sour cream
1/4 c mayo
1 T Worcestershire sauce
1/2 of the juice of a lemon 
6 oz. lobster pieces( you can also use crab or shrimp)
6 oz. artichoke hearts
1 c kale
1 red onion
1 c  fontina cheese, divide into 1/2 c 
1/2 c  Mozzarella 
Cracked black pepper



Sauté the onions, lobster, kale and artichoke hearts in oil.
Add the lemon juice, pepper and Worcestershire sauce 
Mix cream cheese, mayo, and sour cream.
Add the mozzarella and 1/2 of the fontina then combine the veggie lobster mixture.
Place in small cast iron skillet and top with remaining fontina.

Cotton Candy Salad

1 can Eagle brand
1 can Cherry pie filling
1 can Strawberry pie filing
1 can of dark sweet cherries, drained well and chopped
12 oz. cool whip
2 small cans crushed pineapple, drained well
1 c toasted pecans


Mix canned items well, add pecans, then fold in cool whip.
Chill.

Peanut Butter White Chocolate Swirl Pretzel Almond Bark

2 c white chocolate melting chips
2 c dark chocolate melting chips
1/4 c peanut butter
2 c pretzel-smoked almond mix, chopped 


Parchment paper, spraying with Pam
Jelly roll pan

Turn oven on just to warm.
Melt the all dark chocolate in microwave safe bowl and set in warm oven.
Melt 1 c of white chips, set in oven.
Melt other cup of white chips and stir in peanut butter until melted into the white chocolate.
Take out the dark chocolate and spread into pan.
Then take 1 1/2 c of the pretzel-nut mixture and pour on top of dark chocolate.
Drizzle the melted white chocolate onto pretzel-almond dark chocolate.
Next drizzle the peanut butter white chocolate, then press the remaining nut mixture into peanut butter white chocolate. 
Take a fork and swirl it.
Refrigerate to set, break into chunks.

Tex Mex Chicken Taco Soup

1 t olive oil
1 quart water
2 each Red and yellow tiny bell peppers, chopped
1 Onion, chopped
1 T roasted, Garlic
1 ear fresh Corn
1/2 packet taco seasoning, I make my own) under the seasoning tab this blog
1 T Chicken base seasoning
1 can Black beans, rinsed and drained
1/2 of Rotisserie chicken, pulled
1 c Salsa
3 T Creme Fraiche


Topping
Cheese
Sour cream
Fritos or tostado chips


Add oil to pot and sauté onions, garlic and peppers. 
Season with chicken base seasoning.
Add water, salsa, chicken, beans, corn, taco seasoning and Creme Fraiche.
Simmer 20 minutes.
To serve add the toppings

Brown Sugar Bacon Franks

1 pgk. Ball Park Beef no nitrate Franks, cut each one into 3 
Brown sugar
Bacon slices, cut in half
Toothpicks, to secure bacon

Bake 350 degrees for 40 minutes on middle rack in a parchment lined pan.

Using poultry scissors, cut bacon and franks.
Wrap each frank with 1/2 piece of bacon, secure with toothpick.
Take a pinch of brown sugar and top each one.
Bake.
Watch toward the 30 minute mark, the sugar will burn. 
If you see liquid around the bottoms of the franks, remove the liquid using a paper towel.

Cherry Jalapeño Kerry Gold Dubliner Irish Cheese Ball






And he said to man, 'Behold, the fear of the Lord, that is wisdom, and to turn away from evil is understanding.'"  - Job 28:28









2 room temp cream cheese
1 T heavy cream
5 T cherry juice
1/2 c powdered sugar
10 pickled jalapeño slices, diced 
10 diced cherries, can dark sweet cherries, reserve juice
1/2 c Dubliner cheese, shredded
Salt, I used smoked Alder Wood salt 
Pepper, a few turns cracked black pepper

2 c Toasted chopped salted pecans
I salt mine with seasoned salt but first I spray with Pam cooking spray.
Chop and set aside.

Take the room temp cream cheese and add the cream, cherry juice, salt, pepper, powdered sugar, diced jalapeño and cherries, and Dubliner cheese. Mix well. Mixture will be loose, have a slight purple color and be sticky. Cool down in fridge for an hour. Take out and roll into balls, then roll in nuts. Seal in plastic wrap. Makes 2 large or 4 medium.

Manchego and Irish Cheese Mascarpone Sausage Balls

1 lb. ground sausage, hot or mild, pinched off in chunks
1 1/4 c Pioneer biscuit mix
1 1/4 c thick shred( half Manchego half Irish Full flavor)
4 T mascarpone 
2 T buttermilk


Throw into food processor and pulse until it sticks together in a clump.
Separate into quarter size balls and place on parchment covered jelly roll pan.
Bake preheated 400 degree oven for 25 minutes.
Serve with honey mustard.

Instant Pot Whiskey Beef with Red Peppers






6 Thus says the LORD, the King of Israel and his Redeemer, the LORD of hosts: "I am the first and I am the last; besides me there is no god.

1 lb. boneless beef stew tossed in flour
1 bell pepper
1/4 t black pepper
2 T Whiskey 
2 T Worcestershire sauce
Meat tenderizer sprinkled on beef
1/2 t Onion powder
1/2 t Garlic granules 
1 Shallot, diced
1/2 c water

Olive oil and clarified butter for searing meat

Set Instant Pot to sauté setting and add oil/clarified butter.
Season meat with tenderizer, onion powder, pepper and garlic.
Toss meat in the flour.
Sauté meat until it is slightly browned.
Add shallot and peppers, cook 1 minute.
Add whiskey, Worcestershire sauce and water.
Change setting to meat, place lid on, set to pressure, adjust time to 45 minutes.
Take off pressure after 45 minutes.
Remove lid.
Make a cornstarch slurry (1/4 c water plus 1 t cornstarch) to make a gravy.
Serve plain or on rice or egg noodles.

Honey Caramel Almond French Toast

White Mountain bread (Publix)
Crushed almonds
Caramel syrup
Honey
Whip Cream

Bread soak
2 beaten eggs
1/8 c Half and half
1 t Cinnamon
1 T Sugar

Soak bread, grill on flat top or skillet that is greased.
Brown slightly and flip.
Drizzle honey and caramel.
Sprinkle with almonds.
Add whip cream and devour!

Honey Garlic Chicken







so a man lies down and rises not again; till the heavens are no more he will not awake or be roused out of his sleep.  - Job 14:12









Perdue Popcorn Chicken (fried frozen chicken found at Costco)
1 carrot
1 English cucumber 
1 red onion
1/2 c slivered almonds
2 T sesame seeds


Prepare thin noodles or rice and set aside.


Sauce
2 T roasted garlic, mashed
2 T Soy sauce
1/2 c water
1/2 c honey
2 t  Apple cider vinegar
1 t cornstarch 
Mix and set aside.

Bake chicken on parchment paper in a preheated 450 degree oven for 16 minutes.
Cut into bite size pieces.
Set aside.
Drizzle olive oil into large skillet and heat.
Add veggies and stir fry a couple of minutes.
Add cooked cut up chicken and cook another couple of minutes.
Add sauce, stirring to cover chicken and veggies.
Add nuts and sesame seeds.
Remove from heat.
Serve over noodles or rice.

White Balsamic Vinegar Greek Fig Preserves and Bacon Unexpected CheddarStuffed Pork Tenderloin

1 Golden Rotisserie flavored pork tenderloin

1/4 c Greek Preserves, Costco
6 slices crisp cooked bacon
1/2 c sliced Unexpected Cheddar, Trader Joe's
2 T White Balsamic Vinegar

Split tenderloin down the middle, being careful not to cut all the way through.
Flip over and pound with meat mallet.
Set aside.
Take the preserves and thin down with the balsamic vinegar.
Coat the inside of the loin with the mixture.
Slice the cheese into thin pieces, place on top of fig mixture.
Crumble bacon on top.
Flip the two sides one on top of the other.
Cut lengths of cotton kitchen twine and start tying the loin to secure its shape and to keep the filling on the inside.
Sear in a skillet with 1 t olive oil and 2 T clarified butter.
Bake on a rack in a water filled pan, preheated 400 degrees for 30 minutes and flip then 10 minutes, should be 160 degrees internal temp.
Let rest 15 minutes covered loosely with foil.

Marinated Radish Cucumber Salad

1 large English cucumber, sliced with a mandolin
1 tomato, chopped
1 onion, sliced with a mandolin 
6 radishes, sliced with a mandolin


Dressing
4 T Olive Garden salad dressing
1 T sugar
1 T apple cider vinegar
1 t dried dill
Salt and pepper to taste


Mix dressing and set aside.
Take sliced and chopped veggies and add to bowl.
Pour on the dressing and stir.

Nuts and Bolts Party Mix

1 box Crispix cereal
1 c pecans
1 c dry roasted peanuts
1 c almonds

Sauce
6 T butter
1 T seasoned salt
4 T Worcestershire sauce

Melt butter in microwave and add seasonings.


Preheat oven to 250 degrees.
Place cereal and nuts into 2 13x9 pans.
Drizzle sauce over mixture, stirring really well.
Bake 1 1/2 hours, stirring every 15 minutes.

EJ's Beef Tenderloin






4 Then I called on the name of the LORD: "O LORD, I pray, deliver my soul!" 
5 Gracious is the LORD, and righteous; our God is merciful.  - Psalm 116:4-5







First you must get a good cut of beef. I recommend Costco and get the one that's trimmed and ready to cook. It's pricey but worth every dime!!!

1 trimmed beef tenderloin 
Kosher salt
Coarse Cracked Black Pepper, I love Malabar from Costco

Herb butter
1 stick butter, softened 
1 T snipped Fresh chives
1 t Fresh Greek oregano
1 t Fresh Rosemary
1 t Roasted garlic, mashed
1 t Fresh Lemon Thyme
Add to butter and stir.



Place unopened tenderloin on counter 3 1/2 hours before cooking.
This allows meat temp to become even to allow for even cooking.
After 2 hours, open, rinse, place on a cutting board lined with parchment.
Using cotton kitchen twine, tie meat every 3 inches tucking under the end that's thin.
Being careful not to tie so tight that it digs into the meat.
Liberally salt and let sit 45 minutes.
Preheat oven to 425 degrees.
Using a drizzle of olive oil, in a skillet, sear beef.
Let rest 15 minutes to allow for cooling.
Now cover the beef with the herb butter.
Sprinkle with coarse pepper.
Place on a rack so that the heat will be distributed evenly around all sides.
Cook until internal temp is 140 degrees.
Do not go over 140, it's a perfect!!!
Remove from oven, loosely foil and rest, in the rack for 15 minutes.
Remove to cutting board.
Snip strings and remove.
Be prepared for comments like "this is better than a restaurant", and "can I have the recipe?

Glazed Chicken in Marsala Creme Fraiche Sauce Over Long Grain and WildRice

6 chicken tenderloins sauteed in butter/olive oil mixture, chopped
1/4 c Marsala, sweet 
2 T Creme Fraiche 
2 Sage leaves, diced
1 sprig fresh Lemon thyme
1/2 t fresh Greek oregano
1 sprig Rosemary, diced
1 c Water
Cornstarch slurry 1/4 c water 1/2 t cornstarch 
1/2 t Tuscan Seasoning for the chicken
Cracked black pepper

Rice A Roni Long Grain and Wild rice, cook and set aside


Pound seasoned tenderloins and chop.
Saute in butter/oil mixture. 
These cook quickly.
Add water and Marsala, reduce by a third and add cornstarch slurry.
This makes a glaze.
Add all the fresh herbs and the Creme Fraiche.
Serve over long grain and wild rice.

Quickie Spinach Dip for Two



Fast, easy, delicious!!


8 Though you have not seen him, you love him. Though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory,

1 Green Giant Creamed Spinach, cook in microwave according to directions 
1 c  Full Flavor Irish cheese, shredded ( I use Kerry Gold)
1 tomato, chopped
1/2 t  taco seasoning
2 slices of cooked and chopped sausage

Fry sausage and set aside.
Cook spinach in microwave.
Open bag and place in a pie plate.
Add cheese, taco seasoning, tomatoes and the cooked sausage.
Microwave for 1 minute.
Serve with tostada chips. 

Mascarpone Buttermilk Sausage Balls






















Seriously, these are delicious!!!

1 1/4 c Pioneer baking mix
8 frozen sausage patties, thawed or 1 lb. roll of sausage 
1 1/4 c Cheese, I used Kerry Gold full flavor 
4 T mascarpone
2 t buttermilk

Shred cheese, thick shred.
Mix 1/2 of the ingredients in food processor.
Roll into balls and bake preheated 400 degree oven for 20-25 minutes.

BBQ Sauce Thousand Island Dressing






3 Blessed be the God and Father of our Lord Jesus Christ! According to his great mercy, he has caused us to be born again to a living hope through the resurrection of Jesus Christ from the dead,
4 to an inheritance that is imperishable, undefiled, and unfading, kept in heaven for you,
5 who by God's power are being guarded through faith for a salvation ready to be revealed in the last time. - 1 Peter 1:3-5



1/4 c light mayo
1/8 c BBQ sauce
2 T sweet pickle relish

Mix together.
Dressing should be slightly pink, if not, add a tad more BBQ sauce.

Apple Bourbon Pork and Filet of Beef Rueben Sandwich




31 Now is the judgment of this world; now will the ruler of this world be cast out.

I had been craving a Rueben but didn't want to go shopping, so I improvised!

Cheddar Cheese Soup Creme Fraiche Chicken Casserole

2 rotisserie chicken breast, shredded
1 c broccoli florets
1 cheddar cheese soup
1/2 c creme Fraiche 
1/2 c water
2 T  Garden Green Onion Ranch dry dressing seasoning
2 T pimentos 

Topping
1/2 c shredded mozzarella 
1/2 c panko
1/2 c canned onion rings

Mix casserole ingredients well, place in 13x9 pan.
Top with topping.
Bake 350 degrees for 30 minutes.

Cheater Spicy Kung Pao Chicken

10 pieces of Perdue Pop Corn Chicken, frozen at Costco, baked according to directions
1 pgk. Sunbird brand General Tso chicken seasoning, follow directions and set aside, whisk before using
1 c dry roasted Peanuts
1 Carrot, matchstick cut
2 baby Bok Choy, washed and chopped
1 onion, sliced
Drizzle of Olive oil

Prepared rice, set aside

Yes, I said General Tso because it tasted like Kung Pao to me.
This was so fast, ready in 25 minutes.

While chicken is baking according to directions, chop veggies.
Heat oil and stir fry veggies.
When chicken is done, cut each one in half.
Add chicken to veggies, whisk sauce, then pour in skillet, thickens quickly.
Add peanuts.
Take off heat, serve over rice.

Norwegian Cabbage

This is the bomb!!!

1 cabbage, chopped, boiled and drained well

Roux
2 T Irish butter
4 T flour
1 2/3 c whole milk

Seasoning
1 T chicken base seasoning
1 T nutmeg
Cracked black pepper

In a thick bottomed pan, add butter and melt.
Whisk in flour, add milk.
Whisk as roux thickens.
Remove from heat and add seasonings.
Add cabbage back in and toss.

Meaty Potato Hash

2 Potatoes, microwave 2 minutes on each side, chop
1 Onion, chopped
1 slice thick Ham, chopped
1/2 c left over Steak, chopped
1/2 t Garlic granules
1/2 t Seasoned salt
Oil for frying

Heat oil.
Add potatoes, seasonings and brown.
Add meats and onions.
Fry until onions are soft.

Zucchini Yellow Squash Mascarpone Creme Fraiche Casserole






14 For he knows our frame; he remembers that we are dust.

2 Yellow squash, chopped
3 Zucchini, chopped
1 T Creme fraiche
2 T Mascarpone 
1 Onion
1/4 c cheddar cheese
1/2 t Chicken base seasoning 
1/2 t 2016 rub, recipe on this blog 

Topping
1/2 c Panko
1/2 C sharp cheddar Cheese
1/2 c Fried onions canned rings

In a microwave steamer, cook onions and squash seasoning and rub for 5 minutes.
You do not have to add water, both squash have a good water content.
Add the mascarpone and the creme fraiche  stirring to incorporate.
Steam another 4 minutes.
Drain a little of the liquid.
Place squash in a greased pie plate.
Top with panko, cheese and lastly the onion rings.
Bake 350 degrees for 20-30 minutes or until the casserole is lightly browned.

Limoncello Shrimp Broccoli Stir Fry

1 T Olive oil/ 1 t clarified butter 
20 Shrimp 
1 inch andouille sausage, diced
1 c broccoli florets
1 leek, chopped
2 T pimentos 
6 mushrooms, chopped
1 T celery, chopped
1 t roasted garlic
1/3 c limoncello 
1 t chicken base seasoning


Stir fry all veggies,  and seasoning in oil butter combo until broccoli is slightly tender.
Add shrimp, limoncello, and pimentos.
Cook until shrimp are done.
Serve over rice.

Strawberry Mascarpone Cream Filled Puff Pastry

Frozen sheet puff pastry, thawed ( 2 sheets)

Filling:
4 oz Mascarpone, softened
4 oz Cream cheese, softened
1 T Peach Patron
1 T Vanilla
1/4 c Sugar
Mix with a fork until creamy.

 2 c fresh strawberries sliced tossed in dry 1 T strawberry jello
1 T Peach Patron 

Topping
1 c White chocolate candy wafers, cut into 1/4 inch chunks
1 c Sliced almonds
Place one layer of puff pastry in a sheet pan covered with parchment.
Cut other layer into 12 equal strips.
Fill pastry with mascarpone filling, leaving an empty 1/2 inch edge all the way around.
Then loosely lay 6 strips over filled pastry.
Next take the remaining strips and weave them.
Easiest way is to pick up the strips, one at a time, that are already on the filling.
Start under the first, then go over the next, repeat. 
Takes awhile to do but it's beautiful!!
Now fold over the edges for a finished look.
Some of the filling might escape during baking.
If it does, take a metal spatula and remove it.
Bake 375 degrees for 30 minutes and then under broiler to slightly brown.
While the pastry is still warm, sprinkle white chocolate and almonds over top.

White Cheddar Parmesan Sausage Nest For Two





The LORD has made known his salvation; he has revealed his righteousness in the sight of the nations.  - Psalm 98:2









1/4 c chopped onion
2 T red bell pepper, chopped
1 t celery
1/2 t clarified butter

Sauté these veggies.
Set aside.

2 sausage patties, drained, browned and chopped
To this add:
1 Worcestershire sauce
1/8 c white cheddar
Veggie mixture

Parmesan to sprinkle on tops 

4 Hawaiian rolls, separated in halves, scoop out each one in the middle to make a nest.
Add filling and sprinkle with Parmesan.

Bacon Dill Potato Salad For Two

8 multi colored tiny potatoes
1 T Chicken base seasoning
Water to cover potatoes

Cook skin on potatoes till fork tender.
Mash.


Dressing
1/8 c - 1/4 c Miracle Whip salad dressing( depending on how creamy you want it, I used 1/8 c)
1 t Dried Dill
1 t Yellow mustard
4 slices Crispy bacon, chopped

Place dressing ingredients on top of mashed potatoes.
Stir, eat, enjoy!!!

Kolache Bites






Your throne is established from of old; you are from everlasting.  - Psalm 93:2




2 pie shells, cut into 3 inch circles( use scrap shell to make extra circles)
2 T melted butter

Sausage filling
4 sausage patties
1/2 of a leek
1 t celery
1/2 of a red bell pepper
2 T Worcestershire sauce 
1 1/2 c Mozzarella cheese, shredded 


Sauté sausage and veggies until sausage is done.
Remove from heat.
Remove any grease drippings.
Add cheese.
Place a 1/2 teaspoon of filling in each circle.
Scrunch up dough sides to make sort of a star shape.
Brush tops with melted butter.
Bake 350 degrees for 20 minutes or until crust are lightly browned.

Bacon Sweet Slaw Beef Slider

Sweet slaw, recipe this blog under slaw/salad tab
1/2 of a Onion, sliced 
4 slices cooked Bacon
2 T Whiskey
2 T Yellow mustard
4 slider buns
4 burgers, love Sprouts 85% blend
Seasoned salt to season burgers

Make thick slider size burger patties, making a deep well in the middle.
This allows for faster fry time and keeps patty from shrinking.
Sear patties really well on both sides.
Cover and add 1/2 c water to steam burgers.
When burgers are almost done, throw onions in the little bit of the burger grease/water mixture.
When onions are done, add whiskey, bacon and mustard.
These cook in about 12-15 minutes using the steam method and are so juicy.
Place on slider bun, add a tomato slice, fill the well place in the middle with the onion/bacon mixture. Top with slaw, so yummy!!!

Sweet Potato Bacon Pecan Fluff

2 sweet potatoes, microwave 4 minutes on each side, cool, scoop out of skin
1/2 c honey
1/4 c half and half
1 t Vanilla 
1 T Molasses 
1/4 t Pumpkin pie spice
1/4 t Allspice
1/4 t Ginger
1/4 t Nutmeg
1 T fresh lemon juice

Topping
1/4 c chopped Pecans
4 slices Crispy bacon, crumbled
1/4 c Brown sugar

Melted White chocolate drizzle, 1/4 c white chocolate melting wafers melted in microwave for 40 seconds, stir in a splash of half and half and splash of olive oil


After potatoes are cooked and cooled, scoop out the soft inside.
Add seasonings, half and half, honey, lemon juice, molasses and vanilla.
Place in a small glass greased container.
Sprinkle brown sugar, pecans and bacon.
Bake 325 degrees for 30 minutes, turn skillet half way through cooking.
When finished, drizzle white chocolate over top.

1 c Spanish paprika
1/4 c Cajun seasoning
1/4 c chili powder
1 t cardamom seeds, ground
1/2 c Turbinado sugar, ground
1/8 c Garlic granules
1/8 c kosher coarse salt
1/4 c brown sugar


Mix well.
This rub will burn if you do not keep a close eye on it.
It's the two sugars in it.
The taste was very delicious!!

Chocolate Mascarpone Filled Almond Pastry









For the commandments, "You shall not commit adultery, You shall not murder, You shall not steal, You shall not covet," and any other commandment, are summed up in this word: "You shall love your neighbor as yourself." - Romans 13:9








1 box frozen puff pastry, thawed

Filling
4 oz. mascarpone 
4 oz. cream cheese, room temp
1/4 c sugar
1 T orange liqueur 
1 t vanilla

Topping
Dark chocolate, chopped
Smoked almonds, chopped

Caramel ice cream topping

Creme fraiche


Line sheet pan with parchment.
Add one sheet of pastry.
Make filling and spread on pastry.
Take other sheet and top filled pastry.
Slightly fold over edges.
Baking 375 degrees for 35 minutes or until pastry is lightly browned.
Cool slightly and add nut topping mixture.
Drizzle caramel over top.
To serve, top with crème fraiche.

Cucumber Tomato Onion Sweet and Sour Salad

Dressing
1/8 c Italian dressing
1/8 c ranch dressing
1 T apple cider vinegar
1 t sugar
1/2 t Tuscan seasoning
Salt and pepper to taste
Place in bottom of bowl.

Sprinkles
Dried parsley
Dries dill

Salad
3 Small English cucumbers, chopped
1 sweet onion, sliced
2 large tomatoes, chopped
Add veggie mix to bowl and toss.
Sprinkle with herbs.

Italian Sausage Mascarpone Whiskey Sauce






For I do not understand my own actions. For I do not do what I want, but I do the very thing I hate. - Romans 7:15









1 pgk. Italian sausage

Veggie mix
1 Leek, chopped
1/2 Red bell pepper, sliced
2 T Celery, chopped
1 T roasted garlic

1 t Tuscan seasoning
Fresh herbs-Greek oregano-Rosemary-lemon thyme-sweet basil (1 T each)

Liquids
1/8 c Whiskey
1/4 c Mascarpone
1 t Liquid smoke
1 T Worcestershire sauce
14 oz. Prego Traditional
1 c water

Sauté veggies in clarified butter.
Add seasoning and herbs.
Next add the sausage.
Cook until sausage is no longer pink, mashing sausage as you cook.
Next add liquids.
Simmer 30 minutes. 

EJ's Cheddar Biscuits






8 For by grace you have been saved through faith. And this is not your own doing; it is the gift of God,

2 1/2 c Pioneer baking mix
4 T cold butter, cut into 1/8 inch chunks
1/2 t Tuscan seasoning
1 c coarse sharp cheddar cheese
3/4 c buttermilk 
By the spoonful half and half as needed to adequately moisten mix

Biscuit top wash
1 T Melted butter
1/2 t Dried parsley

Into the biscuit mix, add cold butter bits and mix gently.
Next add cheese, seasoning and milk.
Mix with hands until the mix is moistened.
If too dry add half and half by teaspoon full until just moist. 
Hand roll into golf ball size, slightly flatten and give top butter wash.
Bake preheated 400 degree oven for 15-20 minutes.

Blackened Tilapia

Fresh Tilapia (I got mine at Costco)
Blackened Seasoning 
1/2 stick of Butter
1/2 Lemon, cut in wedges
Olive oil

Tarter sauce
Mayo and sweet pickle relish

Pour blackened seasoning on a plate, set aside.
Melt butter in non stick skillet.
Take fish and swish around in butter.
Lay filets on the blackened seasoning. 
Return to plate. 
Add a splash of olive oil to butter, heat and sauté fish.
Fry 2-3 minutes until crust sets, flip and repeat.
If fish starts to burn, remove fish and wipe out the pan, add fish back and continue cooking until fish is flaky. 
Squeeze lemon on the fish and add tarter sauce.

Limoncello Steak Diane Mascarpone Sliders

Left over Steak Diane and sauce
1 Onion, sliced and cut in half 
Dash of olive oil
Mascarpone 
Fresh tomatoes
Slider buns


Add oil to skillet and sauté onions.
Thin slice steak and add to cooked onions.
Next add the sauce and turn off heat.
Stir around to incorporate.
Warm bun and spread mascarpone on bun, add onions, steak and tomato slice.
Delicious!!!

Oven Baked Green Beans Fries







Blessed be the LORD, the God of Israel, who alone does wondrous things.  - Psalm 72:18







1/2 bag of fresh Green beans ( I got mine at Costco)
Chicken stock 
Bring stock to boil, add beans and cook 2-3 minutes until the beans turn bright green.
Shock in ice water bath.
Dry on paper towels.

Flour, add 1/2 t Onion powder and 1/2 t Seasoned salt ( if you like it spicy add cayenne pepper  
Beaten egg
1 c Panko


Dip beans in flour then egg then panko.
Place a piece of parchment on a cookie sheet.
Bake in a 400 degree preheated oven until crisp, around 15 minutes.
Dip in ranch dressing.

Note*
I think next time I'll mist olive oil on them. 

Limoncello Steak Diane






And you are my sheep, human sheep of my pasture, and I am your God, declares the Lord GOD." - Ezekiel 34:31





For searing steaks:
2 Filets, seasoned and seared( I used Butt Rub with a pinch of sugar)
1 T Butter
1/2 t Olive oil

Sauce:
1 Leek, chopped
2 T Chives, chopped
1/4 c Half and half
1/4 c Limoncello 
1 t Butter
1 T Dijon Mustard 
1 T Worcestershire sauce

Slurry of cornstarch and cold water.

Sear steaks in oil and butter, remove and set aside.
In the same skillet, add the rest of the butter, leeks, chives and sauté for 1 minute.
Add limoncello, Worcestershire sauce and mustard, sauté 1 minute.
Add half and half and sauté a couple of minutes until it's reduced by a third.
Add slurry and whisk until slightly thickened.
Place sauce in a bowl.
Slice steak and return to skillet along with chives.
Brown slightly.

To serve drizzle with sauce. Yum!!!

Pear Mango Skillet Pie

6 medium pears, sliced
1 mango, sliced
1 c water
1/2 c sugar
1/8 t each of pumpkin pie spice, allspice, ginger, nutmeg
1/2 t vanilla 
2 T butter
Juice of 1/2 lemon

For crust
1/2 c brown sugar
3 T butter
Melt butter in skillet and add brown sugar.
Add pie crust round.
Set aside.

1 T Cornstarch and 1/2 c water for thickening

1 unfrozen pie shell
Cut a circle the size of skillet bottom, save scraps.
Set aside.

Cook fruit in water with the seasonings, juice and sugar until fruit is tender.
This usually takes 15 minutes.
Add vanilla.
Spoon fruit over skillet crust.
Cut the crust scraps into strips and cover the top of fruit.
Sprinkle brown sugar over the top.
Bake in a preheated 375 degree oven for 30 minutes.
Serve with ice cream.

Mexican Lime Dill Pickle Juice Marinade

Marinade
1/4 c dill pickle juice
1/2 fresh lime, juiced
1 t sugar
1 t smoked paprika
1 t cumin
1 t ancho chili powder
3 T olive oil
1 t Jim Beam


This chicken was delicious!!!
I was unsure of the flavors when I started developing this recipe, but they definitely work well together.

Chicken tenderloins, cut in half and chopped
Onion, sliced
Bell pepper, sliced
Fresh cilantro, chopped

Make marinade in a gallon size plastic bag and place chicken in the bag. 
Marinate for 30 minutes.
Heat a skillet with a small amount of oil.
Drain marinade from the bag and dump chicken in the hot oil.
Add peppers, cilantro and onions
Sauté until chicken is done.
Sprinkle with cheese.
Serve with salsa and chips.

Drunken Shrimp Andouille Pasta

This was delicious!! 
It took me awhile to get this written up. 
When I'm developing a recipe, I get so excited.
I kept changing things but I'm delighted with the way it turned out!!


1 T clarified butter
1 shallot, diced
1 t roasted garlic, mashed
1 T fresh ginger root, minced
12 large shrimp, cleaned and tail off
1 c Asparagus, chopped
1⁄8 c Limoncello
Splash Jim Beam 
1 T honey
1 t molasses 
1⁄4 c heavy cream
1/2 c Andouille sausage, diced 
Smoked salt
Cracked black pepper
Fresh lemon thyme

Fresh angel hair pasta, cooked and set aside.


In a large skillet,  over medium-high heat, add shallots, butter and andouille cook until soft.
Add the garlic, asparagus and ginger, salt and pepper, then saute for 1 minute.
Add the shrimp, limoncello and whiskey to the pan and cook until the shrimp are pink.
Add the honey, molasses and cream to the pan and cook until thickened.
Sprinkle fresh lemon thyme over the top.
Serve immediately over pasta.

Two Squash Stir Fry

2 zucchini 
2 yellow squash
1 c Baby Bella's
1 onion
1 T Roasted garlic, mashed
1 t Greek seasoning
1/8 c Clarified butter, Trader Joe's 
2 T fresh cilantro 
Pinch of Red Pepper flakes
Salt and pepper to taste

Place clarified butter in skillet, heat, add seasonings and cilantro.
Add veggies, onions and mushrooms, sauté until slightly soft.
Add salt and pepper. 
You could add rotisserie chicken to make a meal.

Instant Pot Mexican Pulled Beef






Why are you cast down, O my soul, and why are you in turmoil within me? Hope in God; for I shall again praise him, my salvation and my God.  - Psalm 42:11



1 lb. chunks of beef cut from a chuck roast, I buy a two pack from Costco and cut up and freeze
2 T Ghee, clarified butter
1/2 t Ancho chili powder
1/2 t Cumin 
1/2 t paprika 
Few turns cracked black pepper
1 Leek, chopped
1/4 c Cilantro, chopped
1 bell pepper, chopped
1 Celery stalk
1/4 c Whiskey
2 T Tomato paste 
1 T liquid smoke, mesquite flavor
1 Roasted jalapeño, seeded and chopped 
1 heaping teaspoon of chicken base seasoning
1/4 c mango, chopped
1/4 c water


Add ghee to instant pot.
Heat the instant pot on the sauté setting.
Put the beef in a bowl.
On a plate squirt the tomato paste, add all the seasonings, mix and then add to the meat and toss, making sure the meat is covered.
Set aside.
When the pot is heated, sauté meat, then add veggies, cilantro, mango, whiskey, liquid smoke and water. 
Sauté for 5 minutes.
Cut off pot and change setting to meat/stew, pressure to on setting and set time to 45 minutes. 
The aroma of this cooking was incredible and the taste was so good.
I served mine with tostada chips and fresh mango salsa but it would be good served on crusty bread!
