Argentinian Chimichurri Steak Sandwich






Turn to me and be gracious to me, as is your way with those who love your name.  - Psalm 119:132





Sauce:
1/2 c lightly packed chopped flat leaf parsley
1 t roasted garlic, mashed
1/4 t sea salt
1/8 t freshly ground pepper
Pinch chili pepper flakes
1 T fresh oregano leaves 
2 T shallot or onion, minced
1/3 c light olive oil
1 1/2 T red wine vinegar
1 1/2 T fresh lemon juice

Steak:
1 filet
Sliced onion
1 t applewood rub

Onion buns, toasted

Mashed Avocado, optional


Pan sear rubbed steak.
Continue cooking until medium or desired type of doneness.
Slice thin.
Build sandwich in this order.
Toasted bun, sliced steak. Chimichurri sauce, grilled onions, avocado mashed onto bun

Lemon Herbed Sweet Potato Onion Medley






89 Forever, O LORD, your word is firmly fixed in the heavens. 
90 Your faithfulness endures to all generations; you have established the earth, and it stands fast.

Sweet potatoes
Red new potatoes
Onions
Fresh lemon juice
Garlic granules
Greek seasoning 
Fresh rosemary 
Olive oil
Kosher salt 
Malabar pepper

Prepare potatoes and onions by cutting into quarters.
Toss in oil.
Season.
Squeeze lemon over potatoes.
Bake 375 degrees for 50-60  minutes.

Mesquite Rubbed Turbinado Grain Sugar Pan Seared Chops







73 Your hands have made and fashioned me; give me understanding that I may learn your commandments.

4 center cut bone in pork chops, brine in sugar and salt water for a few hours
Mesquite rub
Coarse sea salt
Malabar pepper
Turbinado grain sugar, use sparingly
Applewood rub

Drizzle olive oil in large skillet.
Remove chops and drain.
Dry with paper towel.
Season chops with salt, pepper, both rubs and grain sugar.
Heat, sear chops.
Flip season on other side.
Cover, reduce heat, cook till internal temp is 150 degrees.

Egg Noodle Stir Fry

1 c spinach
1 shallot
Drizzle of olive oil
1 c left over cheesy sausage salsa shallot dip
Prepared Egg noodles, 2 cups
1 c Pasta water, plus 1/2 c half and half, reduce to make a sauce
Pinch of nutmeg
2 c chopped Rotisserie chicken

Sauté spinach and leek in a drizzle of olive oil.
Add chicken and dip.
Add noodles and water.
Sauté until sauce is creamy and thickened.

Cheesy Sausage Salsa and Shallot Dip







I remember your name in the night, O LORD, and keep your law.  - Psalm 119:55




1 diced shallot
1 lb mild sausage
1/3 of a block of cream cheese, chopped
1 8 oz block of Velveeta, chopped
6 oz of mild Pace Picante salsa

Brown sausage, drain if needed, add shallot.
When shallot is softened, add cheeses and melt on low heat.
Add salsa.
Serve with taco chips.

Quick Herbed Chicken Marsala For Two






I have stored up your word in my heart, that I might not sin against you.  - Psalm 119:11




4 chicken tenderloins, beaten flat

Coating
3/4 c white wholewheat flour
1 T garlic herb seasoning
Sea Salt, to taste
Malabar cracked pepper, to taste

Butter/olive oil mixture, 1 pat of butter in a drizzle of oil

1 leek, sliced
1/8 c white wine
1/4 c Marsala 
1 c water


Melt butter in oil.
Coat pounded chicken in seasoned flour mixture.
Sauté until crisp.
These cook quickly and are so tender.
Remove and drain on paper towels.
Drizzle a tad of oil and sauté leeks.
Add both wines and render to 1/2.
Add water, stirring until you have a sauce.
Add chicken back in.
Turn off heat. 
Serve over mashed potatoes!

Herbed Yukon Gold Mashed Potatoes

6 medium to large Yukon's, peel and chunk
Water
2 T chicken base seasoning
Malabar cracked pepper
1 T parsley, optional

Cover potatoes with water, 3/4 the way up the side of your pan.
Add seasonings.
Bring to a boil and cook until fork tender.
Drain water in a cup and reserve.
Add 1/4 c water and beat with a mixer on low until creamy. 
If they are too dry add a little more cooking liquid as you beat.

Mesquite-Smoked Salt-Spiced Pecans

Pam cooking spray
Mesquite BBQ seasoning
Alderwood  smoked salt
Granulated Garlic 

Preheat toaster oven to 350.
*Spray and season nuts.
Place nuts in oven and cut oven off.
Leave nuts for 7-10 minutes. 

* Season according to your taste.

60% Cacao Bittersweet Chocolate Chip Pecan Pie






2 Great are the works of the LORD, studied by all who delight in them. 
3 Full of splendor and majesty is his work, and his righteousness endures forever.  - Psalm 111:2-3






2 regular pie crust, thaw and pierce bottom with fork

1 1/2 c rough chopped pecans
3 eggs, beaten
1 c sugar
1/4 c melted salted butter, cooled
1/2 c light Karo syrup
1 t cinnamon 
Bag of 60% Ghirardelli bittersweet chocolate cacao chips

Beat eggs with a fork and then beat in sugar with a fork.
Add cooled melted butter, Karo and cinnamon.
Last add pecans.
Drop chocolate chips on the crust.
Space chocolate chips not touching across the bottom of pie crust. 
Pour 1/2 of the pecan pie filling on top.

Bake 375 degrees, top rack, for 20 minutes. 
Bump down to 350 and bake 10-15 more minutes.
When ready, pie should be browned and firm when you shake the pan.
It can be a little wiggly right in the middle and it will set when it cools, around 10 minutes.

Smoked BBQ Meatloaf Nachos

1 slice smoked BBQ meatloaf
sharp cheddar 
Tostado chips
Sweet onions or green onions 
BBQ sauce( I make my own) 

Spread out chips in a plate.
Sprinkle cheese.
Cut meatloaf in bites.
Heat 30 seconds in microwave. 
Add sauce and onions.
Delish!!!

Smoked Meatloaf with BBQ Sauce






8 Let them thank the LORD for his steadfast love, for his wondrous works to the children of man!

This was so moist and smoky!!! Yum!

Meat loaf recipe( I used my Crockpot Cheesy Buttermilk Meatloaf recipe) except I used all beef 2 1/4 lbs. 85/15 blend( I buy mine at Sprouts)
All the grease comes out during smoking and may be poured off.
Mix meatloaf, just till incorporated, and put in a 13x9 foil pan. 
Mash to make an even sized loaf. 
It will be about 2 inches high and about 12 inches long. 
Leave space all the way around the loaf.
Add BBQ sauce on top.
Smoke at 225 degrees for 3 1/2 to 4 hours using green hickory and dried cherry wood.
Add more BBQ sauce when serving.

White Wine Sauced Rotisserie Chicken Stir Fry

2 t olive oil
1 leek, sliced
1 carrot, matchstick cut
2 baby Bok Choy, chopped 
2 mushrooms, sliced
1 T chicken base seasoning
Stir fry veggies with the seasoning until slightly soft.

Add:
2 c rotisserie chicken, chopped
2 T roasted garlic, smashed
1/8 c white wine
2 T half and half

This is a delicious stir fry, cooks quickly with minimal prep.

Quick Olive Oil Balsamic Greek Tomatoes





27 These all look to you, to give them their food in due season. 
28 When you give it to them, they gather it up; when you open your hand, they are filled with good things. 
29 When you hide your face, they are dismayed; when you take away their breath, they die and return to their dust.

These are so good!! I could not stop eating them!!!

Campari tomatoes, the small red ones still on the vine(Costco or Sam's has a large container)
Light olive oil, Sam's Daily Chef is great
A good quality balsamic aged vinegar, I like Alessi Aceto Balsamico
Greek seasoning, I make mine(under seasoning tab this blog)
Smoked salt, I use Alder Wood smoked, can order on line, I was lucky to find mine at TJMaxx
Cracked Malabar pepper, Costco 
Granulated Garlic, Costco

Slice tomatoes in half, spread on plate.
Drizzle with oil and vinegar.
Season with the Greek seasoning, salt, pepper and garlic.

Fresh Pear Cast Iron Skillet Pie







6 But godliness with contentment is great gain,
7 for we brought nothing into the world, and we cannot take anything out of the world.

9 But those who desire to be rich fall into temptation, into a snare, into many senseless and harmful desires that plunge people into ruin and destruction.
10 For the love of money is a root of all kinds of evils. It is through this craving that some have wandered away from the faith and pierced themselves with many pangs. - 1 Timothy 6:6-10







Filling
6 large pears
1/2 c sugar
1/8 t each of pumpkin pie spice, ginger, allspice, nutmeg
1 1/2 c water
2 T butter
1 t cornstarch, dissolve in a little water(add this after 10 minutes.

Cook until pears are tender and juice is a little reduced and thickened.


1 unbaked frozen pie shell, thawed (I cut bottom circle out) reserve sides of pie shell for top crust

Take 3/4 stick of butter and add to skillet. Melt and add 1/2 c brown sugar, remove from heat. 
Add the pie circle to the butter sugar mixture.
Next spoon the cooked pears and juice onto the pie circle.
Take the reserved pie crust sides and scatter over top. 
Sprinkle lightly with pinches of brown sugar.
Bake in a preheated oven on 375 degrees for 30 minutes.
Serve with vanilla bean ice cream.

Brown Sugar Black Peppered Bacon Sandwich with Avocado Aioli

Bacon
Brown sugar
Malabar coarse black pepper

For the bacon, cut in half and fry until crisp. Sprinkle lightly with brown sugar and pepper. 
Drain bacon on paper towel.


Tomatoes, sliced
Toasted potato bread
Avocado aioli, spread onto toasted bread (recipe this blog under dressing tab)


To assemble, take toasted bread, spread with the aioli, add bacon and tomato.
Enjoy!

Smashed Avocado Aioli







My steadfast love I will keep for him forever, and my covenant will stand firm for him.  - Psalm 89:47 







1 Avocado, peel, seed and smash with a fork
1/2 t Mayo
Pinch of Kosher salt
Pinch of Garlic granules
Pinch of Grill Mates Applewood rub
Pinch of Grill Mates Mesquite rub
1/2 of a lime, juiced

Add all ingredients and stir together with a fork.
Use as a dip or a sandwich spread.

Potato Soup with Bacon and Seasoned Croutons( knock off J Alexander's)







5 Let the heavens praise your wonders, O LORD, your faithfulness in the assembly of the holy ones! 
6 For who in the skies can be compared to the LORD? Who among the heavenly beings is like the LORD, 
7 a God greatly to be feared in the council of the holy ones, and awesome above all who are around him?  - Psalm 89:5-7







6 medium potatoes, cook in microwave 3-4 minutes and flip, repeat, chop
2 T chicken base seasoning
Cracked black pepper
2 t parsley
1 onion, chopped
Drizzle of olive oil
1 t roasted garlic
1/2 c sharp cheddar Cheese
1/4 c smoked Gouda
3/4 block of Cream cheese, cubed
Water


Toppings
Cheese 
Bacon bits 
Croutons, seasoned( I cut up French bread, toss in oil, season with salt and garlic, fry in skillet.

Add a drizzle of oil to pot. Add onions and cook until tender, add garlic.
Add chicken base and stir to dissolve.
Add 1 1/2 qt water, bring to boil.
Add cooked potatoes, pepper, parsley, cheese and cream cheese.
Simmer 30 minutes.
Use an emersion blender to break up potatoes.
Thicken soup with cornstarch that has been dissolved in water.

City Ham Steaks for Two

I adapted this from Alton Brown's City Ham recipe.
This would be great the Holidays!!




Ham Steak, I used Costco Kirkland brand(3 steaks to a pgk.)
Yellow mustard
Brown sugar
1 T Bourbon
1 t Molasses 
Ginger snaps, crushed 


Paint the ham steak with yellow mustard.
Sprinkle with brown sugar, this is a preference thing. I used about 3 T but you could do more or less.
Mix the bourbon and molasses.
Drizzle over brown sugar.
Add crushed cookies. Crush in a food processor or blender.
Bake in a 350 oven for 45 minutes.
The crust should slightly harden.
This is delicious!!!

Light Tasty Waffles for Two






1  God, do not keep silence; do not hold your peace or be still, O God!

These are delicious!! Just like Belgium waffles from a restaurant!! 

1 egg
1 c white wheat flour
7/8 c milk
1/4 c olive oil
2 T sugar
2 heaping t baking powder
1/4 t salt
1 T vanilla extract

Using an electric hand mixer on lowest setting, beat egg until light and fluffy.
Add all ingredients and beat until incorporated.
Heat waffle maker.
Spray with non stick and fill with batter.
Do not overfill.
Waffles should be browned, crusty on the outside and soft on the inside. 
To reheat, toast in toaster oven.

You can add chocolate chips or pecans to the batter.

Butter and honey
Fruit, honey, cool whip
Honey, toasted pecans, powered sugar and cool whip
